    Is the valley in the rice thing something that the professional sushi chefs do, or is it a hack to help beginners get the hang of rolling?

      That is mostly a hack, but some professionals will use it if they are trying to get a lot of ingredients into a hosomaki-styled roll.

    I am going to make Sushi for my daughters school lunches. Can I prepare the rice the night before? If so whats the best way to refrigerate cooked sushi rice?

      Donald Erickson it's best to make the rice fresh each morning, but you can make it the night before and refrigerate it in a sealed container.

      One more question. Do you wrap your rolling mat in plastic or do you purchase them that way? Thanks in advance for the great advice!

      The problem with putting sushi rice in the refrigerator overnight is that it will make it hard and, of course, cold. On the few times I have left it overnight, I have covered it in the bowl with a wet towel. It's not nearly as good as fresh sushi rice, but it beats the heck out of sushi rice that was left overnight in the fridge! PS - go to bed late and get up early!

      Yeah, you could. The bamboo mat makes everything easier though

      @@Secretsofsushi it's alright. Not all sushi has to be perfect. But I'll take that advice if I want better sushi.

    Espero y este consejo te sirva sabias que el vinagre de arroz hace reacción con el metal y la reacción que hace te puede envenenar te aconsejo y te quites los anillos para preparar sushi o cualquier alimento ya que el arroz lleva vinagre , saludos y éxito

    roll did not look right, used way too much rice, you wont even be able to taste the fish, good techniques tho
