He sounds like he’s talking to you personally, at ease, like he’s in your kitchen. He doesn’t want it to sound complicated or like his objective is to sell you products. Japanese or not, he’s got a straight shooter Texan style.
I personally find people who use rich words and try to say words in different synonyms is very boring. Because in real life nobody use them or understand them

This is the only proper sushi tutorial that I've found on RUclips. I used to be a sushi chef, and sometimes I get on a kick of watching sushi tutorials just to nitpick what the teacher is doing wrong. They always leave out key techniques like wetting the knife, and checking mid-roll. They also all keep using full sheets! So much rice! Lol Good work though, from one sushi chef to another.

What I find most remarkable is that he actually uses a traditional European style chef knife which tells me he's not a poser. Japanese steel is great but you don't need it to make sushi.
I enjoy cooking ever since my dad retired cuase he was badly injured from the army i would always watch him cook and when hes not cooking i would watch cooking videos and this was the by far best sushi video cuase the other ones wont give u tips andtricks and they wont do close up veiws thx for ur awesome video

Sushi is really an art... It takes skill, time, patience and enjoyment to create it... Sushi also gives us excitement seeing it and more encouraging to eat.. so nice to see art in a plate
My heart literally fills with joy every time I see the beautifully red tuna. It's just gorgeous. And MUCH better when eaten raw. I actually prefer most of my fish raw.
Me and my wife are making our own sushi at home and I don't think I'm ever going back to a regular sushi place unless they are outstanding. So good at home

I've been making my own sushi for the last 15-years or so and have watched crazy amount of videos (30+) on making sushi. Yours was by far and away the very best I've seen. My sushi always looked different than the sushi I would get in a sushi restaurant, and now I know why. The way you explained the proportions of rice to use for the various types of sushi as well as how to cut the fish correctly was particularly helpful. I thought I was doing something wrong because I had to clean my knife after every cut and now I know that's actually a good thing to do. Would like to see you do a regular maki roll besides the inside-out California roll. Anyhow, really well done. Thanks!

I was never a fan of Sushi but my wife is. Chef Thomas changed both my understanding and knowledge of Sushi. Clear instructions and easy to follow with reasons why you do it his way. I will definitely be making some Sushi soon.
I made sushi for the first time today! It wasn’t pretty but the rice was right and with practice I’m sure I’ll get a prettier roll. So thank you for sharing your methods.

This is a good explanation outside of japanese circles / language, without the restraint quite often of negative to follow past practice without understanding. I use the traditional style but as I do more, I find that this is equally valid.
