I really love that you guys will tell us how to make some of your stuff at home. Instead of guarding everything and trying to get us to buy your stuff instead of making it, you give up tips for it... its so nice.
Amber Jade well, yeah, but when I see what a trouble it is, I’d rather just buy theirs. I am sure their experience and techniques just make a better chocolate. Wouldn’t be a treat if you had to make it yourself.
@@mickeylackey723 but its more of a treat when you make these as gifts, and give to loved ones. they make lovely gifts and people enjoy them more because you made effort to make them something. truffles arent too hard to make either, very easy a know if can look scary, but trust me these are pretty easy to make and you can play around with flavours too creating your own.
@@laraallen5004 It's a motivation thing. Most people aren't motivated. So they help the few people who will actually try making them & look good to the people whom would just rather buy them mail order. Plus, there's a small chance that those that do make them, order some of theirs to do a side by side comparison. (They probably also are getting a check from YT for these videos.)
It takes time. A lot of people work and don't have the time, even if they know how to do this. Also, he's a business and makes a much LARGER batch than we would at home. I'm retired and have worked at it, even when I worked, I'd make a home style batch once in a while for special occasions. I did a lot of chocolates one year and sold them at a Mother's Day craft show. But normally I don't do that until the fall to winter holidays 🙃
Your mom and dad look like such awesome people. I really like watching them work and the way they are towards each other. Greetings from Cape Town South Africa.
Your dad is the cutest freaking thing ever! He is so sweet and you can tell he tries with the videos but in all reality ain't feeling it lol. I love how when you ask him things you can tell he is like ummmm (thinking in his head does this not just come natural to everyone)🤣😍🤣
OMG, the black-and-white interlude when mom drops the turtles --- when you have you say you're fine when you're really not. LOOOOOL. Poor, mom. She's a good sport.
I absolutely LOVE these videos. I really enjoy the banter. I think I've watched enough to have gained a 9 piece box, I forget the weight. Keep these fun videos coming. Love Mom's sense of humor!
I used to be a negative person that would post negative comments on negative people's negative videos. However when I discovered Hercules candy I felt a blanket of warm calm come over me. Its funny to look back now and think I used to be a negative person. You have saved me and redeemed RUclips. Keep up the satisfying videos
Ruben Gilmore! Your honesty is very refreshing. I admit I have posted negative comments on other videos occasionally as well. But , like you, I have been inspired by this loving family to do better, to be better ! They treat each other with love, respect, patience and good humour. And their videos are educational and fun ! I feel I am a better person for knowing them as well!! Oh! And I love the organized chaos and all those amazing contraptions !! LOL ! PS. It has been 3 yrs. since you posted your candid, genuine admission, Reuben. I hope you and Hercules Candy and "fam" have safely survived the pandemic. I'm sure you all endured it with grace, positivity and truffles !! I am so glad I stumbled upon these videos recently, H.C.! You had me at the huge chocolate melter machine! And the various extension cords were a close second.... Greetings from Toronto, AYE ?!
if you're making this at home, you can just take your choc unmelted and use the heat of the cream to melt it while mixing, an even simpler way to make ganache is just putting chocolate and heavy cream in a bowl and microwaving it, I've only done this with chocolate buttons (the ones for melting) but you also need to be careful with how long you leave it in the microwave (the buttons shouldn't be melted all the way when it comes out of the microwave)
Okay, I made the truffle mix today and it has been in the fridge since 2 pm. I gave it a twist by adding 1 tsp peppermint oil to the truffle mix. I made a half batch. I have not decided if I am going to chocolate powder coat them or have them chocolate covered. The powder would be much easier fer shur :) I will post some instagram pics when I am done.
Love your videos Craig. I watch them all the time. Even when I’m outside working in the garden, I have my earbuds in and listen to everything while I’m working or cleaning the house. Just love them! Awesome job!!
I like to use a cookie dough scoop to portion out my truffles. Goes faster than the traditional spoon method for scooping, but you still need to roll the balls before coating if you don't want a flat side.
"Sprinkles may fall off" terry you're such a perfectionist , I can't imagine many people care about losing a couple sprinkles. If I didn't live in Australia I would order it all.
I could watch you guys all day! Usually I don’t like longer videos but y’all are just too freaking cute! I love your family already! One question though: how did he temper the chocolate that he is coating the truffles in?
What a loving sincere family, with a heritage to be proud of. I have a young niece that is learning how to make truffles and she will be excited to see your setup and your store. She is very energetic as well as her mother. They learned a lot from my mom, and carry on some of her traditions. May you be blessed each day, every day with joy, faith and happiness in your hearts.💫🙏💫
How wonderful of you to show us how to make assorted candy! I love watching you do it by hand with such dedication. You must have the patience of a saint to make SO much candy for others to enjoy. I am going to attempt making some of the recipes which you've been so kind to share with us. Making candy is such an old time tradition for the holidays. Thank you for all your videos of how to make sweets for our loved ones!! Happy holidays to you and your family!! 🌲
Great idea! I've been making chocolate truffels myself for a while now, for special occasions, but always coverd them with Cocoa powder. Just rolling in them, but this covering in chocolate I will try, so I can make dark versions for my mom and milk and white for me and the rest of the family. Great idea Steve to add the sprinkles. 😉 Thanks for making a great video Graig.
I came across this today. I love the old basement shows!!! It’s like going back to my childhood (even though it was only about 5 years or so that I found you guys). Miss the basement and of course Max.
Haha!!! The chocolate melters! Lucy and Ethel... That's what we call our kittens. They're really Rosie and Stella, but we realized after we named them that we missed an opportunity 😂 They're DEFINITELY a Lucy and an Ethel!
I think cookie dough truffles would be 11/10. if they keep well can you try some, and see how they sell, because i wanna order some cookie dough truffles.
I don't know how I missed this one. I make chocolates for Christmas gifts and truffles are the easiest ones . I won't be doing it this year I am not up to it anymore . If anyone says is that all you do , tell them to try making your quantity then come back and say it. Your verity is incredible and I can't wait to place an order for my girlfriend over there love it xoxoxoxo
Made your recipe today with dark chocolate. I also added some instant coffee before cooling. And after rolling, added them on top of peanut butter cookies! Jif of course! Even better than Hershey kisses
What compound chocolate brand do you use? Trying to recreate at home. I see it’s Land O Lakes Heavy Cream. Tried Cadbury Chocolate and it does not come close to your special ones. Thank you!
Hi from the Midwest (Kansas) I volunteer to type up the recipes and enclose them in plastic sheets so they will be safe!! I can be "paid" in chocolate truffles.
you said 5 lbs of chocolate to 4 cups heavy cream? If you have 1 lb of chocolate and 1 cup of cream would that make it short a 1/4 lb of chocolate or did you add the weight of the bowl also?
Not sure if it is possible but if you could deliver to other countries you guys would make a fortune.. mainly because I'd be ordering all the time haha
I have a suggestion. Try using a silicon mold in small ball shapes and cool them down. I bet that would save Steve time and trying to carve out the truffle insides then roll them.
I'm a year late watching this but you should go buy a 1/2 tsp ice cream scoop. Wilton's etc sale them. Thatwhyitmakesitso much easier and quicker to roll even balls.
My family is coming to Hercules Candies next weekend. We're from Canada and are coming on the way back from our US road trip. Make sure there are some chocolate covered cherries available!
Love your mom and dad they are very sweet people but my question is do you guys waist any chocolate and if you do how much do you waist or loss b aide I know when you cover something in chocolate on the table you put parchment paper on the table but as the day goes on the chocolate must et hard so do you guys throw it out at the end of every batch or everyday or every couple hours. ?
The chocolate gets chopped up and added back to the kettle to be remelted and used, so, no, we don't have an over abundance of chocolate in our garbage
Your dad said the chocolate was almost tempered, as he was mixing it on the table. How would a person temper chocolate at home for dipping? Love your sweet family. Everyone is so "sweet" cute and funny
Gaga4 Goats The recipe I figured out after lots of testing is, melt one package of milk chocolate chips (11ounces ) with one package Wilton light cocoa wafers (12 ounces) in a double boiler. No tempering needed. It hardens great,is shiny. Even molded chocolates pop right out! Don't get mixture to hot or it's wrecked! 💝🍫
What temp. Should dark chocolate be after I temper it...to start dipping mr. Steve? I will be using Pound plus from trader Joes for my truffles...thank you...
Get some gum and try this: chew it in slow motion, do the normal movement but slower, does anybody else tongue push the gum under you teeth and then pull out right before your teeth touch and then once you teeth separate they push the gum in. It’s a miracle that I don’t bite my tongue more
So if I did this at home, once the mixture was mixed (before it goes in fridge overnight), could I put it in like a 13 x 9 pan? Was wondering if that would damage the mix? I'm hoping that in the pan I could cut it into little squares so they would even then shape them into balls.
Quick Steve is such a genuinely gentle and beautiful soul.

I make truffles for the holidays but i use condensed milk and rum...orange, raspberry, mint and coconut. I love watching you guys.
Those truffles made with coconut chocolate (instead of dairy) mixed with coconut cream and coated in coconut would be so yum. Might have to try that.
This video is for their stuff not your nasty coconut crap!
@@effyou128 Yeah butt, They don't eat that nasty cream crap either!

Karlis Libietis If you are using a chocolate bar and hot cream, chop up the chocolate as small as possible. It will melt the chocolate bits easily.

Might be worth sending Terry an email with what you want so she can have it on hand, would be sad to get there and they not have any left.
it looks like there are lots.
can someone spell the preservative he added at 3:20. i am unable to understand it

melon baller......they are really fancy with the choc du-dads on them. Nice. Really nice after boxing......looks great in the store.
If you make the one pound batch, how much mold inhibitor do you use? And do you use milk chocolate for the inside and outside?
And Barry White + Chocolate is a great combo.

I yelled at the screen when craig got the truffles from the fridge while holding the camera as well. UGHGHGHGHH 😪
What is your sell by date for your candies. I saw one of your videos that you need to label your packages.
I never thought of dipping my truffles by hand like that, but I am going to give it a go.xx
Hey Steve, I love your hand mixer, with a light above the beaters. I've never seen anything like it here in Australia.
What a fantastic family business! Do you guys ship to the UK? Have you tried making Scottish tablet?
Great job guys! Wish i could buy it sending love all the way from Singapore ❤️
Would love to see a video of the tempering proceeds details. Also when was this company founded and what made your family decide to make candy?
The second half of that questions is in our channel trailer called The History of Hercules Candy
I just love chocolate so much that if I got into the candy business I would distain it after a while . I'll just stick with consuming it.
