You can get away with just glue using his build method. You just have to clamp it and wait for the glue to dry before moving on to further assembly. Another way is to skip the dados and use pocket screws on the top and bottom panels. Unless you look under or above the cabinet you wont see the pocket holes and it keeps the side panel clean.
Im not sure where you live but if you have a Menard’s in your area they have a decent selection of prefinished birch and maple plywood. If not i would look up a plywood dealer in your area. Price in my area usually sits between $80-$90 per sheet of 3/4 and 1/2 and 1/4 being around $50
Yeah better safe than sorry. I’ve noticed as I’ve gotten older just regular old wood dust will bother me. These particular pre finished panels give me a nasty headache and congestion if I don’t wear the mask.

Did you find that cutting the pre-finished plywood had cleaner cuts, i.e. less tear out?
Your blade is going to determine the cut quality. I will say that it definitely glides across the table saw much smoother than unfinished
There's toxic glue in many panels so good on you for wearing a mask.
