    What's so great about you is that you are very easy to understand, and you also make sure to let us know how many grams and celsius heat we need to use since us europeans don't use cup measurements and fahrenheit. Other than that, you seem like such a lovely person and I just wanted you to know that I, and many other people really appreciate the fact that you use your time to share these delicious recipes with us! :) Thank you so much for your effort!

    I use this recipe in all my sponges . Whatever you want to call them. After baking for years and years, I find this recipe to be exactly the done.

    Cream and jelly sponge rolls are certainly a classic but I'd never have thought putting the jam IN the cream!!!! Simple but genius! :)

    is there any other kind of pan that i could use to bake a jelly roll cake? could it be done in a 9x13 pan? or even cut the recipe in half and use an 8x8 pan?

      krsnavani Yes, I tend to buy most of my kitchen things from either Williams Sonoma or Sur la Table. Although I usually check amazon as well as sometimes they are cheaper.

    You always make everything look so easy. This looks so yummy. My daughter's been wanting to make a jelly roll, this video will really help her. Can you tell me what we'd need to add and how much, if we want chocolate sponge cake flavor instead please.

    Hi Stephanie, you have a few recipes for Swiss Roll Cakes. One in particular differs from this video in that you added cornstarch & whipped some egg whites separately & combining it with the main batter later. My question is, which recipe do you prefer for a basic roll cake?

    I was told that is better to use medium eggs when baking

      That depends on the recipe whether that is true. If the recipe was developed with medium eggs then it’s right but if the recipe was developed with large eggs then there wouldn’t be enough egg.

    Looks good so do you wrap it up in plastic wrap and store in fridge ? If not looks like it would just unroll !!!

      Yes, I normally wrap it in plastic and place it in the refrigerator.

      +Natalie ReiSoleil If you live in the States you can find cake flour on the baking isle of your grocery store. It is normally sold in a box and can usually be found with the cake mixes.

    I made this and it turned out perfectly, thank you. If I wanted to flavor this with dutched cocoa powder to make a chocolate sponge cake, how much cocoa powder would you recommend adding and would any other ingredients need adjustment? I tried your flourless version of the chocolate jelly roll also and I find i prefer the texture of this recipe.

      vvnusa1 If you live in the States you can find cake flour on the baking isle of your grocery store. Sometimes you can find it with the other flours or sometimes they place it by the boxed cake mixes.

    I made this recipe again and it blew my mind once again. But my roll cracked a lot last time. This time I made some changes-
    1. I added additional 1/8th tsp baking powder.
    2. I didn't roll it or fiddle with it while it was hot.
    3. I didn't roll it at all, instead I put it into a half cylinder mould and put filling in it and sealed it with a layer of cake.
    4. I used a wire whisk to incorporate the dry ingredients into the whipped eggs and that made my eggs deflate a lot less.
    The fluffiness of this sponge recipe is unmatchable. It's is even fluffier than Japanese super fluffy sponge cakes. This sponge has no eggy flavour, it is extremely delicate and it just melts in your mouth. It is so soft that you won't be able to tell the difference between the cake and the cream.
    I will stick to this recipe for the rest of my life.
    Tip- don't overbake it. Always keep an eye on it. Mine got baked in just 8 minutes. Get it out of the oven the moment toothpick comes out clean and the cake springs back. Start checking it at the 7 minutes mark.

    Hi Stephanie (Joy of baking): After baking, the sponge has an eggy smell and my sponge just broke, so I could not roll it, although the cake was light and fluffy. Can you please tell me what can I do to fix this?

      You could do that, but leave out the baking powder and salt that are called for in the recipe.

    Just wondering, Stephanie, why the recipe doesn't call for whipping the egg whites separately. I see you do that in another sponge cake recipe video of yours.. I always thought this was required for a sponge cake (not that I'm complaining)!

    Hi...when I do icing with fresh cream and store in the fridge the cake is getting harder..when I buy from store it's very good and moist....what should I do for cake reminder soft and moist.....

      Manjula Krishnan This cake is fairly soft even when refrigerated. However, cakes that contain butter will get firm if stored in the refrigerator. Cakes made with oil will stay soft when refrigerated.

      +RandomnessLOL - Dogs are unable to taste sugar, it's just bad for their teeth.
      Let alone, almonds and nuts are very likely to cause an allergic reaction and grapes/raisins are lethal for dogs.
      Pastry is really, really not for dogs :-(
