Hollywood was more focused on shooting schedules running to budget or schedule. No surprise that some of the more low-key films of Jackie's in the West are great (Rumble in the Bronx, Rush Hour) but not so much the bigger ones (Rush Hour debatably satisfies both markets though). The Raid and Raid Berendal make a great case for capturing that era's dedication to great fight sequences on screen though.
I just hollywood would take a bit more care into making shots in movies look even a little better as opposed to "ok we're running on money lets phone it in and move on!" kind of mentality. You are right. This fight scene was more hardcore because the movie is not directed by Jackie Chan himself but by his senior Sammo Hong. Sammo is well known for hardcore, less clowning fight choreography compare Jackie Chan's. If you see all Jackie's movie thats Sammo as director. His fights are more hardcore. Another one is Dragon forever. Sammo as senior pushed his junior (Jackie) to his limits as always.
this fight truly is amazing. I especially like Jackie's ramp up dance at 0:34 which always makes me think DAMN he's READY! And those punches he threw around 4:25 ... WTF? That was not a stunt fight. That looked real. Excluding the old style fight sounds, this beats out pretty much anything we have now. Not even John Wick fights are this exciting. (Even though some of the last John Wick movie seemed to borrow a lot from several of Jackie Chan's old films.)

But this scene, Jackie is actually CHALLENGED. He's the UNDERDOG in this fight, and we WANT to see him win, because there's a very real chance that he might lose. Jackie allows his characters to be at least somewhat VULNERABLE. And how long is an invulnerable hero going to stay interesting?

I know this is a year late but the one you heard in the Cantonese version should have been this one. The one you probably heard is the international version where they play Battle in the Old Castle, which was a released soundtrack. The one playing in this video is actually unreleased; in my opinion, I like this one better because of its Hong Kong origins.
I hate this background music in this version, the other version is much much better, yes there are two versions from that fight with different background music :) but the fight is my favorit jacky chan fight of all time
