Love lentils! I make them at least once a month. Mine are not French, but here in Chile we have great lentils, they package them by size, and they do not split. I don’t even have to soak them. Great food.👍👍👍
I ate a lentil salad in a brasserie in Bordeaux, and it was my favorite dish of the entire trip. Now I understand what I ate. They were small and dark - very different from what I have encountered in the US. So delicious!!

La cuisine française n’est plus vraiment en vogue mais je suis heureux de voir que beaucoup de gens apprécient la chaine et ses different recettes. I only use Du Puy. I soak over night or 12 hours, then steam them for 12 minutes. Straight out of the steamer I toss red-wine vinegar that has been soaking herb d province. That's my base, then. Feta Cheese cubes and diced tomatoes, or sausages, or white fish ceviche (same red wine herb liquid) or anything you can imagine really. .

Richard Walker depends where you are but suprisingly they are not hard to find . Many contries now grow them in America Canada and Australia . It’s not the exact French ones but the non split effect is still there: www.royalnutcompany.com.au/general/lentils/dupuy-lentils
