- Talk about a fun way of making chicken drumsticks. These chicken lollipops are a family favorite at our house.

We start with regular, plain ole chicken drumsticks. Take your knife and cut around the bone, just where the meat ends. Pull off and scrape all the cartilage and skin to expose the bone. Then pull down on the meat side to form the ball shape at the end. Once prepped, season with your favorite chicken rub.
I used a chicken leg rack to cook the drumsticks. It helps them hold their shape and get a nice and even cook. Plus it's just a cool way of making it.
Cook the chicken on the indirect side of your grill at 350 degrees, until it reaches about 150-160 degrees internal. Pour some of the bbq sauce into a small cup and dunk each lollipop in the sauce and put back on the rack. Do this for each one and continue cooking for 10-15 minutes, until the lets hit 170-180 internal. This will give the sauce time to tack up a bit and also fully cook the chicken.
I like to take my dark meat past the 165 range. They get a bit more tender and still remain plenty juicy.
Remove from the grill, let them rest for 10 minutes and enjoy!

- Indirect Heat
- Temp: 350-360 degrees
- Sauce at 150-155 internal
- Finish at 165 +
I made these last night and they were out of this world! Crazy delicious! Your tutorial was terrific. I had 14 drumsticks I needed to make into lollipops. My first attempt took me about 7 minutes. As I got closer to the 14th drumstick, I was able to cut away in less than a minute flat! I’m a pro now😉

Made these last night, didn't spend as much time cleaning up the knuckle. Took maybe 20 seconds per drumstick. Whatever was left on it burned off on the grill. My wife, who doesn't like drumsticks, said these are a lot better. Getting rid of that tough cartilage made them easier to eat.
at the end, looks like poultry meatballs on a natural skewer. Beautiful. Always liked smoking drumsticks for the cost benefits, nice tips.

I always brush my BBQ on and it takes forever. I'm going to have to steal that technique. One thing I would like to suggest for presentation is to wrap the bones with aluminum foil. The bones will stay nice and white like a real lollipop.

freeze all the ends you peel off in a seal a meal for chicken stock it will keep a few years int eh freezer if you seal a meal it well . . .

Whole Foods sells chicken lollipop meat with the ends already trimmed so you don't have to do all that in the beginning.
Can it be done in an oven as well ???

you need an extremely sharp knife to make it easy
one more thing cut up at angle to get through the tendons much easier

Yes, I sure have. And I would cook them the same way. Temp around 350 or so and just let them roll.

What about the annoying toothe pick bone that's in the leg. I didn't see how to get rid of that.
That totally reeks of effort. I guess that's why I don't make them.
Sure upsets me to see you wasting all that seasoning on the cutting board. Personally I would have rolled the chicken in the seasoning on the board before I shook more out. Always going to waste some but dang there was a LOT of seasoning left on that board. I personally like to season in a cereal bowl so I can use as much as possible.

Hmmmn so 5 mins prep time per drumstick. We have 12 people at the bbq ...say 60 or 60 drumsticks . Hours of drumstick manicuiring. I cant see it.
