Smoked Chicken Lollipops
The chicken lollipop is a "frenched" chicken leg. The meat is cut loose from the small end and pushed down creating a "lollipop" look. The leg bone is left clean and creates the "stick".
To turn regular chicken legs into lollipops you'll need a sharp knife and a pair of kitchen shears. Make a cut completely around the lower part of the leg just below the knuckle cutting through the skin and tendons. Push the meat down to the large end and pull the remaining skin and cartilage off the knuckle. There's a tiny bone right against the leg that needs to be removed. Remove this bone with your fingers or the shears, and trim away the tendons sticking out the top.
To season the lollipops I start with a dusting of my All Purpose seasoning "The General". Next I layer on The BBQ Rub. howtobbqright.com/bbqshop/ I give it a good dose for flavor and color. One last step is to cover the exposed bones with a small piece of aluminum foil.
Let the chicken sit for 30 minutes at room temperature while the smoker is coming up to temperature. At the house and in contests I'm using a Yoder YS480 pellet smoker. It's set for 300 degrees running BBQr's Delight Apple pellets.
While the cooker is heating, place a stick of butter in a ½ size aluminum pan. Go ahead and set the pan inside the cooker, so it has time to melt. Once the smoker is up to temp, place the lollipops in the pan with the bones sticking up straight. Close the lid and let it cook for 2 hours.
After 2 hours the internal temperature should be in the 165-170 range. Dark meat is done at 175 and that's just enough time to glaze the lollipops.
For the glaze I use Killer Hogs "The BBQ Sauce". howtobbqright.com/bbqshop/ Be sure to remove the aluminum foil and dip the entire lollipop in the warm sauce.
Continue cooking the lollipops for 30 minutes until the glaze is set. You'll want to keep an eye on it, to prevent the glaze from burning. The final temperature should be 175 when you pull the legs off the pit.

I want you to know: people are still coming back to these videos, even years later. Thank you for the awesome recipes. Let’s get to cookin’!
Truth👍
I just did... I go back to whenever if it's what I'm looking to cook to see what everyone does to get there and cherry pick the recipes here and there to get the results I would like. Sometimes I just follow the recipe as is.
Hell yeah! Just got my offset smoker, this will be my first recipe today
@@matttillyer8046 same here, gonna make these this weekend
Always come back to him or Harry Soo for advice videos.
I don't know why your not getting the continued thank you's you deserve for this video in 2018. I started smoking 35 years ago with an old freezer that I gutted and made into a smoker because that's all I knew how to do. I'll bet there's a heck of allot of us that started that way. Now I'm 61 years old. We moved and have DSL internet. Just discovered you in July 2018. Thank you much. I'll never be a competition guy, but now I might be a hero in my family circle. Best wishes, and thank you for what you do to help all of us that love to cook on a grill or smoker..
Making these for dinner tonight! Malcolm's videos deliver every single time!
Malcom - Can't thank you enough for this recipe. Tried it last weekend on my Big Green Egg and they came out absolutely phenomenal! Everyone loved them, parents and kids alike.
I go back to this video, even 9 years later. Thanks Malcolm
I made these lollipops for Super Bowl party. I followed your recipe and instructions and they turned out perfect. Never made these before so I was a little nervous. I got so many compliments. I made 24 and they were gone in 30 minutes. I also made your smoked party wing recipe yesterday and they were also great. Thanks for your great recipes. I’ll ride your coattails as long as you keep posting great food.
Hey Malcom, always love to watch you videos, I just want to say thank you if it was not for you I would never have got into BBQ, I have come a long way since then thank you sir.
thank you malkom i found your channel when I first looked up a smoked wing recipe, I made that about a dozen times, so I can trust your expertise. I followed your chicken drum stick recipe here and still waiting on the smoker for the results, as i type this comment. Thank you, i appreciate your work.
My husband made these today and used Traeger rub and Traeger sauce and it was phenomenal! Thank you!!!!

Malcom, you are the man! You keep it simple and to the point. Keep it up.
You are "The" BBQ pit master! Love all of your work and sauces. Keep the videos coming I'll try them all! I failed so many ribs and chicken and sadly my thanksgiving turkey, about sold me smoker and gave up. Then I found your channel and work and you gave me new hope and after buying your products and recipes on here it's turning around. I'm going to need to order your large size bags of season and gallon of sauce. After making the lollipops I had to use the whole 12 oz bottle to heat it up and then I couldn't use the rest. Keep up the great work, and maybe post so,e of your stores coupon codes on here to help us out with the sales. You got me as a customer for good. I appreciate your stores communication, the emails, the tracking, and emailing confirming I received the sauce. You go ore than beyond and I appreciate it. Thanks man! Keep on kickin it up.

They look great. Good information on how to do this.
Just got your package today; the BBQ run, and your sauce, your store doesn't sell your AP spice but this weekend I'm doing a BBQ for about 30 people, and I'm going to make these. They look amazing and I hope mine turn out 1/2 as well as yours. Your my hero and I'm going to need more of your sauce. I tasted your rub and sauce and it's out of this world. It's my new go to rub and sauce. Your my help. Great job
I am LOLing at those chicken LOLipops. Definitely going to try them out, though.
Trying these tonight on my BGE. Thanks VERY much for the video of the prep-work....very valuable.
i just received your seasoning i gotta say its the best thing i ever tried bbq sauce is on point as well
I LOVE watching your RUclips Channel! This Chicken Lollipop is something my husband had at a "shooting event" recently (only done with quail legs) and he asked me if I could research it. This is freakin awesome - I can't wait to try this out myself! Awesome job as usual! Thank You!
Looks incredible!
Awesome. .trying this for sure
Glad I found you on RUclips. This is good stuff.

Video quality has improved indeed. Had to come back to this goodie tonight. Thanks sir!
The lollipops look great and I bet my grandkids would love em. I'm going to try a few tomorrow.
Wow that looks delicious, I'm gonna try it. Thanks
My next fun dinner for the family, love the idea!
I'm going to take it a bit further and remove the skin and wrap it with bacon. GREAT JOB Malcolm !!!
Though that cant be bad, you end up blocking the chicken from absorbing that beautiful smoke. Maybe wrap the bones in bacon so the juices drip down on the meat
Thanks! I'm trying this today!!
Just made these on my Traeger, holy sweet jesus did they ever turn out. The prep is a bit tedious but the results are unreal. Great beer drinking 2 bite appetizer; tender, moist and smoky. Well worth the effort, thanks Mac!!!
You are amazing thanks for the tips
So this was my first time making these. Followed your recipe, I must say they are awesome! You have a new subscriber sir!

So *that's* what a Frenched chicken bone should look like.
Great recipe!!
Mr. Reed this too is Mr.Reed of Denver, Colorado. Your You Tube "How To (s)" are a real god send and I wish you the best Sir.
Sam Reed Thanks Mr. Reed. Appreciate it.
Malcom amazing job, just wondering which glaze you use it?thanks mate
So creative! You’ve taught me so much, brother!
Another awesome recipe, this is the best BBQ channel online!
Few French cuisine tricks: If you take that rag and grab the tendons, you should be able to pull them out entirely instead of just cutting them off. That way it won't end up in the final product at all for easier eating. Another presentation thing would be to cut the knuckle of (which is easy with a big knife after cooking).
Looks great, cant wait to try this. Thanks for sharing how to prep this as I always wondered how.
the trimming and prep was easier than you'd expect.
Awesome! Glad I found your channel. Subscribed and liked.
Yes, Malcolm I made these today and boy it is good I used Heath Riles rubs and it was good the butter set it over the top
2020 and these are still 🔥🔥🔥🔥
That is too cool. I gotta try that.
Good idea Malcom! Going to be giving this a go soon! Love the videos man!

dave scheihing glad to hear it! Good luck out there getting more of those trophys.
Man! I love what you do ! Great tips, great ideas . Keep doing what you’re doing .just waiting for my invite!!😂 I thank you for helping me start my channel! Appreciate it !
I am a new subscriber and I do love the videos I have seen so far and I am hoping there will be plenty more to watch frequently , the only thing I would say and I am not trying to be rude is that , everyone seems to make videos with smokers and other things but ALWAYS neglect that a lot of people just have gas grills / common bbq's and we need to know the temperature to hold / use and time frame for our bbq and not just ... how many coals to use or what time on the smoker etc . We need the conversion of the temps and times for our gas grill and if there is a way to smoke and such on the gas grill adding that info helps , other than that ... LOVE the work you do brother .. great ideas , methods , skill , ingredients etc.
Amazing!!!
so awesome
Smart idea chef
I used this recipe and they turned out fantastic. I did about 18, and it took a long time to prep. Those tendons are tricky and slippery, and sometimes the small bone does not want to break off near its base. I think the work was worth it, as I hate those dangling tendons on regular drumsticks.
Muy rico felicisidades
really dig what you do bud.. keep it up
Morrosco55 Thanks - appreciate it.
what a grate way to get the kids to eat.. they go as fast as I can make them and never no left overs. but I must say I like them too.
next on my list for sure
I like the technique of making the lollipops. That is all I need to know.
Looks good brother
Great video sir!!! You made one mistake...😂😂 the paper towel. That was a sick that sauce off your fingers moment!!! Gonna try it. Thx
I like that the prep removes the inedible parts. I wonder how it would turn out for those of us without such a fancy grill.
I just saw this style trending on whatever app thing, and then this pops up and I see you covered it 7 years ago. :) But this method you used is much much easier.
