Agreed. I've seen others do the 360 cutting of skin & tendons right close to the foot, and then push all that meat up. You get a meatier lollipop with less waste.

This was the best cooking tutorial I've ever seen. Nobody shows the precise location of every cut like you do. They just tell you what they're doing with a wide angle shot of them doing it and you just have to figure it out. You actually hold up every cut, with the knife basically an arrow pointing to what exactly needs to happen. I hope you make more because I'm sure you know how to cook some shit.
We use chicken lollipops a lot, specially in Ramadan, our butcher told us to make slight cut on the end of the stick and bring down the meat instead of separating it, so that you have more meat on the lollipops. 😰🤭

That cutting board is giving me anxiety, my guy. 😅 Did you put it in the dishwasher or submerge in the sink water? I've never seen a board warp in the middle like that.
Looks great, but I don't love how much good meat was removed in the process of cutting the skin and tendons. That technique of cutting the skin lower on the bone certainly makes it easier to get the tendons out, though. I may try it if I am using very meaty legs.
When you look at all the trimming it seems excessive, but per serving your not missing much. It’s worth -20 calories for the peace of mind when eating, no more being careful with your bites and picking tendons out of your teeth. Just chicken and bone, it really enhances the eating process.
You can literally do whatever you want with the chicken scraps lol. I specifically prepared the chicken in this video for a specific look I was going for , for this particular dish. I discarded of the chicken scraps , simply because I FELT like it. Could I have used them for something else ? Yes ...but , I didn’t feel like doing so lol. It’s fine, I’ll donate the 2oz of chicken scraps next time.

This process really only takes 30 seconds if that and very minimal cutting. Slide your thumb under the smaller section (after 360 cutting of course) and pop the meat off the joint. That small portion should come right off as one whole piece and is salvageable. Just flip it back over the joint before completely detaching and slide it down with the rest of the meat.

You don’t have to discard the rest of the chicken scraps if you don’t want to. You can use the scraps for multiple recipes. This technique is for presentation purposes and I personally do mine this way for a specific look. I’ll post the full recipe soon , so everyone can see the finished results.
They have a lollipop chicken restaurant here in Chicago in Albany Park. Really don't understand the concept, it takes much longer to prep and it's wasting part of the chicken 😒
Not at all how I lollipop…I make sure to cut every tendon and ligament out from the bottom. And push the meat all the way into itself, and then wrapping the skin over the pop to trap juice and flavor

Please never prepare chicken on a wooden cutting board, unless that's all you ever use that cutting board for. The bacteria from the chicken soaks into the wood and can cause cross-contamination with other food.
That's a tourne knife not a pairing knife!! No gloves, you dont clean chicken, that can cause food poisoning. Terrible tutorial, bad hygiene and you wasted too much meat and presentation would be unappealing.
For starters, it’s a curved pairing knife. A ‘’ tourne ’’ knife is paring knife with a curved/bird’s beak blade. A simple google search would’ve cleared this up for you. Second, gloves are not required for preparing foods that are not ‘’ ready to eat’’, meaning cooked and ready to eat. Serve safe class teaches this and I’m well aware of how to maintain safe food practices. This isn’t my first rodeo. I , the person who paid for this chicken, can do as I please with the chicken scraps. I’ll post the full tutorial and let the audience decide how appealing the presentation is or isn’t .

Agreed. I've seen others do the 360 cutting of skin & tendons right close to the foot, and then push all that meat up. You get a meatier lollipop with less waste.
All the cut off just put in Ziploc & freeze for stock later or even better make a sauce for your lollipop chicken.
Yh just make a chicken stock with it few onions celery carrots ect salt pepper herbs then your good to boil siev and freeze

Looks very presentable. After stripping the tendon away, I just go through the bone with a knife. It's less hassle. But I like how your way looks.
