My friend makes Mortadella de Bologna and adds a lot of garlic. Also his pork belly fat is run thru the grinder with the large plate used for “chili meat” grinding yielding little plugs of fat to mix into to your sausage meat. Loved the video! Bogdan should make you a simple wooden “soapbox” to give you a little elevation for wrestling with the meat grinding operation! Cheers!

That is the bomb! Great video! I'll take your "air bubble" version of any store-bought any day! I think that gives it a texture I would like even more. I currently have a half gallon of dang sauce and just finished my first regular bottle. It's definitely very good. Not crazy spicy, but enough to give anything a little kick. Cheers!

You need to cut meat and put in freezer for about an hour or so then grind it. Also if you mix your spices with the meat before you grind it, it will season it much better

I found a German site that sells the outdoor wood cooker like pops Russian fried rice. Has a wok, a cauldron, a skewer for the top. More outdoor style recipes please.
Since you make sausages you should invest in one hp meat grinder it’s that what I have to do deer and elk sausage it look delicious but the dang sauce should’ve stayed love that stuff
You can eat raw meat, rawdog is what we call it. Cracker spread. Ground beef, onion, egg. Mix and put in fridge. Some use green pepper also. I'm sure I'm missing seasoning or something. Other places have other names for it
I feel like you either did not sharpen your grinder blades enough or you put the grinder together wrong(been there ... done that) as that grinder is working really hard for not much gain .. just an observation.. I would also like to mention .. nitrates are important (keeps listeria, salmonella, and botulism away ) but make sure you let the cure bind with the meat fully before you take some out to fry it up for seasoning the 1 to 2-day curing process is enough to do that .. if not the nitrates are in a state of flux and In the right circumstances can bind with your gut and can cause free radical growth that can lead to the big C word .. just make sure to let the meat sit in the fridge for at least 2 days before you process it further and there will be no chance of the big C .. I learned this info from another RUclipsr by the name of..... 2 guys and a cooler .. he is very astute and matter of fact when it comes to safety and meat-cured products

yummy! Maybe next time you could try adding some olives (cut in small pieces first) and black pepper (whole grains or in pieces but not too small) 😊

In Spain is not usual to add the fat cubes. Insted we add olives or pepper inside.
