Is it necessary to use baking powder and yeast together?

Hi Susie, I noticed when I didn't add baking powder, the steamed buns were less fluffy so I always add both yeast and baking powder now. Also adding cornstarch makes a difference when I experimented. If you like chewy texture more, you can try omitting baking powder. Please let me know how it turned out ❤

    Why corn starch?

Cornstarch softens the harsh proteins of flour, making tender baked goods. I usually add certain amount of cornstarch to all-purpose flour to make cake flour at home. You can find my homemade cake flour recipe in my channel for reference in case you want to make your own.
In this recipe, I’m adding small amount of cornstarch to make the steamed buns softer but still chewy. It was way better than the ones just with all-purpose flour. Hope you like this recipe. ❤️

Can we fill these with meat?

Yah of course! Or I sometimes put red bean paste.
