    Unbelievably delicious...and surprisingly simple! I have been scared of cooking short ribs for a while because I assumed it would be a big, complicated process. I followed this recipe to a T and it was so easy, and the result was a great flavorful dinner. Definitely will make this again!

    It took me a couple of days because I had to go to 3 grocery stores to get all the ingredients ( the closest Asian grocery is about 40 minutes away!) BUT it was so worth it. This was delicious. My son could not stop saying how flavourful it was. Thanks you so much Seonkyoung for all your recipes.

    We tried a lot of RUclips recipes for Galbi Jjim and this is honestly the best one. Our only substitution was that we used fresh rice cakes instead of the glass noodle. You may want to add more spice, but it was mild enough for my toddler to enjoy it as well. A+! This recipe tastes as good as 10 Butchers and Daeho.

      @@AlanBiffable I'm also assuming you go to Kunjip which regrettably has almost doubled in price for their galbitang over over the last 5-6 years so now I'm just trying to figure out how to recreate these dishes without burning hole in my wallet. Just fyi Coleman Costco does sell prime beef ribs in this specific cut, although a bit fattier than i'd like (not all local costcos do). Happy cooking!

    I made this today.. I don’t have maesilaek so I pureed canned pears and used apple flavor soju... subbed potato and carrots (coz I don’t have any) with bamboo shoots, collared greens, shiitake and ear mushrooms.. tossed some boiled quail eggs too!
    it really didn’t matter what veggiesI put in, the meat, sauce, and noodles were aaaaamazing! Thank you!

    Had sauvignon blanc instead of rice wine and made 2x the sauce. Probably why it wouldn't reduce. Lol. Also, I went overboard with simmering. Meat is tender but the vegetables were over cooked. Still, it was super tasty and my friends like it.
    Thanks esp. for making it simple. Happy I now have this under my belt.

      @Ruddhi Potnis, I wonder the same thing because those block beef ribs are getting ridiculously expensive ($12-14/lb here in HI) 😪 I make this awesomely good Galbi Jjim recipe only on "special occasion" ie. when this cut of beef is on sale 🤣 Whole Foods sometimes has it on sale for "only" $7.99/lb 👍👍
      Perhaps I can subs it with beef oxtail or center cut shanks?? 🤔

    Soon, I will make it again, for the third time, yea, I like this recipe that much. Glad I picked Seonyoung's recipe, instead of hundreds out there, to make such a costly dish as I can't afford/risk to ruin it 😅
    I add shitake mushrooms, too ... wonderful addition! 👍

    I made this three times now it it came out awesome on the first try! My boys devour this dish!! I'm going to try beef chuck instead of short rib next time, easier to find and a lot cheaper cut of meat.

    Cannot go wrong with Galbi...ever. Be back in the RoK in a few months for a visit. Son is working there at K16 as a DoD contractor.
    Been a "few" years since I was there....think 27. But who's counting?

    WOW, it tastes so damn good!!! I just finished making it, tasted the sauce with small piece of kalbi, LOVE IT!!!
    I make it super spicy with thai chili flakes and gochugaru powder as well. I used Konnyaku Fettucine noodles 🥰😍👍
    I also added 1 small apple 🤩😁

    Wow, this looks so delicious! It looks closest to the Galbi Jjim dish served in one of my favorite Korean restaurants. However, at timeframe 2:51 you mention that you can substitute regular red pepper flakes or Thai red pepper flakes for the gocugaru (Korean red pepper flakes). I do not recommend this! Korean red pepper flakes is from a relatively mild Korean pepper. Both the regular red pepper flakes and, especially, the Thai red pepper flakes are considerably hotter than gochugau! It is easy enough, nowadays, to find Korean gochugaru. There really is no replacement (possibly other than some other varieties of pepper flakes I have seen in the Middle East.

    I have a bad stomach so as much as I like some spice, I tend to avoid it. That being said, I’m so going to try this without the chilli! It looks DELICIOUS!

    Curious, why did you smooth the edges of the vegetables?

      Mainly for cosmetic and appearance reasons.

      @Vanessa Delamora for a cleaner/less starchy broth since the edges of the vegetables will melt off into the liquid while cooking. I wouldn't bother with the carrots but definitely consider trimming the edges of a potato if you are going to use them...or use peeled baby potatoes

      It's because the edges tend to rub on each other when it's boiling hard and causes it to break up

    Did you have to add more water during the 1 1/2 hours that the ribs were braising? I'm cooking this recipe now and the water is evaporating too quick to last the duration of the braising. Also, what would you do towards the end if the sauce isn't thickening up? Not there yet...just curious
