Hershel was keeping the last bit of Rick's sanity together and then he was killed with Rick, again, trying to do the moral thing. Rick also tries to do the moral thing when he's caught by The Claimers telling them to take him and leave the rest. They ignore him and then he thinks one of them is going to rape Carl. That's where he snaps. However, other events prior to that didn't help his sanity.
