Ingredients:
4-5 medium carrots (grated)
1 cup full-fat milk
1/4 cup sugar (adjust to taste)
1/4 cup ghee (clarified butter)
4-5 green cardamom pods (crushed)
A handful of cashews, almonds, and raisins (optional)
1 tablespoon khoya (optional for richer taste)
Instructions:
1. *Grate the Carrots:* Start by washing and peeling the carrots. Then, grate them finely using a box grater or food processor.
2. *Cook the Carrots:* In a heavy pan or kadhai, heat 2 tablespoons of ghee over medium heat. Add the grated carrots and sauté for 4-5 minutes until they become soft and slightly cooked.
3. *Add Milk:* Pour in the milk and stir well. Cook the mixture on low-medium heat, allowing the milk to reduce and the carrots to soften further. This will take about 15-20 minutes.
4. *Add Sugar and Cardamom:* Once the milk has reduced and the carrots are cooked, add sugar and crushed cardamom. Stir well and continue cooking, stirring occasionally, until the halwa thickens and the milk is completely absorbed.
5. *Add Ghee and Dry Fruits:* Add the remaining ghee to the halwa and mix well. Then, add the chopped cashews, almonds, and raisins, if using. Cook for another 5 minutes until the ghee is well incorporated, and the halwa has a smooth texture.
6. *Optional Khoya:* If you want a richer taste, add khoya (mawa) at this stage, stirring until it blends into the halwa.
7. *Serve:* Once the halwa reaches a pudding-like consistency, turn off the heat. Serve warm or at room temperature, garnished with additional nuts or dry fruits if desired.
