I've been there a few times. The best time to visit is late morning or early afternoon on a Friday, when people are doing their last minute Shabbos shopping. I usually don't like crowds, but the crowds in Mahane Yehuda show the flavor of the city. Warning! If you go to Israel on an organized tour, they will never go near Mahane Yehuda. Get a private tour.
