I believe that most of the white on top is actually overlay or stroma(cobweb is much more wispy or hair like and is usually more grey than mushroom myc ). In my experience and research overlay is due to over saturated substrate, improper casing, lack of fresh air, or has a stroma variant in the genetics. As for the contamination, Trichoderma loves lots of water and lower PH. So it is easier to create an environment that doesn't support its growth than to try and block it out. Using gypsum or hydrated lime in the substrate will help to raise the PH. If you can achieve a PH of 8.5-10 the trichoderma should not be able to grow.
