Rotisserie Wings Smoked on the UDS

  • Rotisserie Wings - set it and forget it style cooking on the Ugly Drum Smoker (UDS). I used about 1-1/2 pounds of chicken wings and brined overnight. Then I covered them good with a typical BBQ rub before I loaded them in the rotisserie basket. I loaded my UDS with hickory coals at a low/medium heat, started the rotisserie motor, put the lid on, and walked away for about 20 minutes. I checked them every 10 to 15 minutes adding wing sauce each time. Compared to flipping wings on the grill, this is like "set it and forget it". Just sauce them a few times..so easy. I continued cooking them until they reached an internal temperature around 180 degrees for super tenderness. Let them rest uncovered for just a few minutes then serve with your favorite sides.
    The Brine:
    salt, sugar, water, beer, molasses, soy sauce, garlic powder, onion powder, bay leaf. Bring ingredients to a hard boil while stirring. Remove from heat and add ice until the brine reaches about 70 degrees. Add brine to chicken until just covered and refrigerate overnight.
    BBQ Rub:
    I used Kinders BBQ Blend
    BBQ Sauce:
    I used Kinders Hickory Brown Sugar
    The Ugly Drum Smoker:
    I built this UDS from two 30 gallon drums. One drum makes up the main chamber of the smoker. The second drum was used for the smoker lid, the rotisserie attachment, and two access doors to feed coals for slow smoking.
    The Rotisserie Motor and Hardware: This was the smallest rotisserie I could find for my 30 gallon drum and it works great.

    The Rotisserie Basket: This basket will fit the 30 gallon drum. It is very light weight and needed a couple of modifications to make it work but works perfectly now.
