    Amazing. What was the heat consistency around in the drum above the heat plate? Also did you just chuck wood chunks on top of the briquettes?
    I love it. I want one!

      Hi Richard, UDS barrels are susceptible to outside ambient temperatures. Practice on a calm day, not on a windy day. I mixed the wood amongst the charcoal as not to ignite it all at once. Happy smoking 🍻

    Are you not worried about zink poisoning due to using galvanized metal for the charcoal basket?

      Hello Ivan, you make an important point regarding zinc oxide fumes, one I didn’t mention in the video. Modern galvanised metal contains no lead only zinc which is a good thing of course. Zinc only oxidises when it exceeds its boiling point (907 degrees C). A new container like my fire bucket needs to be ‘burnt in’ with an extreme fire (away from food) to ablate the surface. What’s left is a coating of carbon which then acts as a barrier. In a UDS the fire bucket temperatures are always lower than if the bucket was in the open air. The UDS by design is a smokey environment meaning it will not exceed 900 degrees in the bucket - zinc melts at 415 degrees but it does not oxidise. If you weld galvanised steel you are creating mountains of the toxic oxide because of the extreme temperatures involved.
      UDS toxicity trouble happens with drums that have internal epoxy coatings - if you don’t remove it thoroughly you are in poison territory - likewise, using briquettes that have been prepared with flammables to make them light easier - using wood chips that have bark on them is also nasty.

      View to a grill Thanks & hello! The Turkey took 4 and a quarter hours - I pulled it when the meat temp was 163 F - it climbed beyond 165 F while resting for 30 mins. Cooking temp was 245-250F. All the best.
