That zucchini bread looks delicious. One of the ladies at my dialysis center asked me to make zucchini bread. She loves my baking and I take them treats every once in awhile.
I've never tried putting the zuccini in with the dry ingredients. I'm definitely going to do that next time. Here's a tip ... spray the inside of your pan with cooking spray and then generously coat with cinnamon sugar - even up the sides, shaking out any excess. Not only does this make it super easy to remove your loaf from the pan, but the sugar carmelizes into a sweetly satisfying and slightly crunchy crust. 😋

This is a wonderful recipe. I made it yesterday-July 24-and it came out perfect. I added a scant half cup of mini choco chips. walnuts, and used sour cream in place of oil. I baked it in my 8 by 8 inch glass pan, sprinkled crushed pistachios on top. It took 1 hour to bake. I added a little bit of ground cloves,too. I've never made zucchini bread before,but this worked so well. Thanks!

As a fellow hispanic and Autism family who absolutely loves your cooking, could you some how possibly hi-light some successes you have had with cooking for your son? I love when you randomly mention him or we see is sweet face in a couple videos. We struggle so much with feeding our 7 year old boy with Autism. I have even blended 2 cups up in the blender froze thaw and made zuchinni bread. Always wondered why they call it bread instead of cake??? Looks delicious. I wish instead of saying "2 zucchini" you would have said "2 zucchini - about 1/2 pound, or whatever they weigh". I have all different sized zucchini so a weight would be more helpful. Others may disagree though.

FYI its not double its 3/4 for the butter verses oil. Meaning if the recipe calls for 6tsp oil you use 8 tsp butter, not doubled

Parchment paper ! Available at any store.....if you wade it into a ball first then it well easily fit into your pan !

Didn't salt zucchini then rinse and drain? Just shred and add right to flour mixture?🥶
The other zucchini recipe is better
Followed the directions exactly. Was awful. Soggy. And baked it longer than directed.
