Thanks for a wonderful episode Randy. Love the long format too. The french dressing will absolutely be the next one to try. I've made my own salad dressing for years and I'm to the point I can't bring myself to buy the bottled stuff. Nice to have a slightly retro option in my dressing repertoire.

Swunnerful! Our English Mums were Mother Empire in the badlands. Me Mum got the English Women’s Weekly and in the early 50s found a recipe for curry which she made regularly until her passing. It was out of this World. Basically one cup each of chopped onion, quartered mushrooms, sliced apple (with skin) and cubed cooked chicken or lamb with one cup of thickened stock. The secret was Sharwood’s Curry powder (mild, medium or hot) and Sharwood’s chutney (Major Grey or mango). You just cooked it and served with rice! I like your approach to curry with its braising and use of mega tomatoes that I’m going to try. In exchange on Friday I’m cooking a shrimp (prawn, my dear) curry and will use cream of coconut. I used to make curries with Garam masala but since an aunt, who lived in Ceylon for years and years taught me how to use spices not Sharwood’s, I can make a curry according to my mood I.e. do I want hot or comfort? Thanks my dear for another eye opener. I love your patter and devotion to Leonard. Cheers, Colin. p.s. if you can find an Indian or Pakistani market that caters to them, look for snacks made of chick pea flour. There are tons of different ones all with varying degrees of heat. A bowl of these makes a great nibbly prior to a curry.

I love your show, because its not just based on recipes ,but it has funny parts, really relaxing it makes me happy to watch and I really like the tips and stories you narrate throughout the show. I recomend ( although I imagine you get a lot of ideas and your own) you do a grilled lamb kebab dinner tonight and show us how to make your own pitta as well . I went to a dinner party that and it was really fun ,but it was lamb and chicken because some people dont like lamb but I do. I will wait for any episodes more and I really think you are very talented and have a lot of personality and know a lot about food and cooking as well of course. Bye!

I started making curry after I lived in England mostly watching cooking shows on youtube ,back in England you hardly ever have to make your own curry in supermarkets in England they sell dinner meals to heat up in the microwave or oven and it is soo good you never have to make your own curry, that is my opinion at least. OH BY THE WAY I MADE THIS CURRY IT HAS SO MUCH FLAVOR IT IS VERY, VERY GOOD.THANKS FOR THE RECIPE.

Great easy French dressing rendition. I've tried to copy the "Catalina" dressing by... whoever. Once I tried my homemade "passata" -- another time tomato paste. These did not emulsify well. As far as the curry, my Indian pal says add some water to the toasted masala and onions and reduce to really pull in the flavors. (the water, I think, has an osmotic effect to draw the masala into the onion and then the onion enriches the rest going forward).

Tart cherry juice basically 'cured' my eczema. Its expensive af though, I think a few years ago a large jug of it was like 35 dollars or something...but it worked.

I realize that this is an older post (sorry, I just stumbled on to you and have been binge-watching since). The reason that the dressing remains emulsified is because the manufacturers use emulsifiers such as lecithin, or its more toxic cousin, carrageenan. Don't use carrageenan. But you can emulate the results and get amazing emulsified sauces with a cold egg yolk (think of mayonnaise, after all). I love Greek Salad and the flavor profile of Greek salad dressing, but not the thin watery body, so I make an emulsified Greek Dressing by mixing in an egg yolk into the olive oil, lemon juice, and red wine vinegar (fresh oregano and dill are best, but whatever). It remains creamy, more opaque and sticks to the salad greens. My Godfather, Pericles Argyrus rolls over in his grave, I'm sure, but it makes a great salad.
Milk proteins also work (hence buttermilk and yogurt-based dressings) as well as avocado (already emulsified by nature). None of the other emulsifiers work as well as egg yolk, and must be used in much larger quantities, thus, changing the flavor.
If you get a chance to read this message - please give a little help cooking for a crowd. With siblings, nieces, and nephews ONLY, no friends or collateral relatives (cousins or boy/girlfriends) I cook for 12 people. Yes, some of them are 4-year-old girls, but that is more than adequately compensated for by the teenage boys. When I get ambitious and invite over two or three couples and allow the kids to bring boy/girlfriends, I frequently cook for 20! A little help, please.

Palm sugar should be grated before use. They make awesome desserts or may be melted down as a sauce to be poured over ice cream or panna cotta and more!

46:30 Randy - the dressing in those salad kits, why doesn't the dressing separate...why? They use xanthan gum as an emulsifier to prevent separation. 😉

Well crap...now we can't hang out since you like papaya over mango. But since I still like you, have you made papaya juice? More a smoothie but oh so good. Blend cut orange/yellow papaya half a banana and a milk or milk alternative. Add ice, sugar and a splash of almond extract and blend smooth and enjoy.
