Tyler, Lowe's sells special drywall bits 4 to a pack. They're also known as dimple bits, because it will set the screw to the right depth, and make it easier for mudding later.
Have you consideredan extra layer of insulation on the treeless side of the house? Every R helps. Faced foam board. It would also give a bit of extra sound proofing.
The way I did my shiplap is, I ripped down sheets of 1/4 plywood in 6-inch wide strips and used a brad nailer to install, leaving a nickel size gap between them. You can't tell its plywood, and it was so much cheaper than buying shiplap

I think that's smart to do shiplap on the wall up to the loft, the kids will be climbing, so if a foot slips there won't be any holes in sheetrock....
