@@systemshin_ Try Marca Piña rice vinegar, diluted with water (vinegar:water = 2:3), and some sugar (vinegar:sugar = 3:1). Add a bit more water if it's still too acidic. A cup of rice should have ~2 tbsp of that rice vinegar solution mixed in. But imho, it's best to look for some "failed" _tapuy_ (a local rice wine occasionally sold in Baguio) or some other regional rice wine vinegars. Vinegar is basically a "spoilt" wine or spirit, so if someone's trying to make wine out of rice, he should almost certainly have accidentally made some vinegar. You could probably ask around if there're local rice vinegar variants sold near you.
I still have the "natto" trauma because my friend sneaked in a unflavored natto in my sandwich as a prank. I didnt smell it because i had cold that day. Oh my god. Natto + cheese and sour cream is not a great combo.
