      If I'm correct that stuff is actually digestive tract waste (fecal matter) also known as poop 😲🤢 from the lobster. The FDA warns to not eat the green stuff because of serious illness.
      EDIT: Never mind what I said previously, I just found out that it's crab fat and it acts as the liver and pancreas to filter out the toxic substances in the crustacean and it poses a health risk to people if it's eaten 🤢😷.

    I have a twin sister and when we were very young our parents would boil the live Maine lobsters and mom would dish out the tomalley. No matter how careful she was Barb and I always felt the other had more. Even today only the tail meat pleases my palate more than the tomalley. Bravo to one of the few hosts I have seen who knows where what I call a secret cache of lobster meat is. I wish I could remember when, where, and how I learned about the meat found in the pockets inside the body but I am glad you showed other lobster eaters where it is.

    You got all the head meat, but forgot about the tail flippers! There is sweet, gossamer meat inside. Another trick for the legs is to line up three at a time and roll the meat out with a rolling pin (or wine bottle) Next you should do a female for the demo so you could show and discuss the roe. Also super delicious, with a different texture, I usually ask for a female so I can get the roe. The females have smaller, feathers in the nethers.
    Good explanation tho, at home (Nova Scotia) we use the back of a knife to break the claws, and the knuckle meat is always the hardest to get into - but we also either bash with the back a knife, or cut through it with the knife - have to be careful tho.. those spines hurt. Uncle and Granddad were lobster fishermen, I know my stuff.
    Overall, great video highlighting how to shell a lobstrosity.

    Grew up in Maine eating lobsters and steamed clams. Learning early to find every piece of meat in the tail body and claws. Live in Montana now and miss going down to the docks and buying fresh from the boats.

    It’s hard to tell from the video but the fins on the end of the tail are also really good and I couldn’t tell if he got them. I also would have showed how much meat you get from the legs as in my humble opinion are almost the best part of the lobster. Also as as side note you want to add lemon, hot pepper flakes, a dash of tobasco , and a dash of pepper to the butter. Trust me you will love it.

      The green stuff is stomach,dust etc which carries parasites.so we shouldn't eat it.same with mammals and birds that we eat

    Use a rolling pin to get leg meat out. Start at the feet and roll and you get this whole lobster leg meat. Sp sweet. When chew on the legs you aren't really getting all the delicious meat, mostly juice.

    Alton Brown had a great tip for the small legs. Cut the shell open at the first knuckle, closest to where it attached to the body, then lay it down with the claw close to you, and run a rolling pin over it, pushing away from you. All the meat in the leg will squeeze out like a little french fry. If you are in a restaurant, you could probably use a glass or a salt shaker.

    I worked in a lobster plant and this is literally the only video I have found that almost has a perfect shuck! A nice long bladed knife would do a better job at the claw you can separate it better. Also you can just buy a lobster knuckler.

    Love your video by the way I live in a small town and I'm happy to say I actually live right across the street from the arena we recently have a new fish market that's right across the street from where I live they offer live lobsters live crabs fresh fish for sale and cook lobsters and cook crabs well I bought myself my second cooked lobster tonight he was a small one but your video is very helpful and I agree I didn't grow up with a lot of money and the shellfish I remember the most eating every bits and was crawdads otherwise known as crawfish but I call them crawdads and oh my God eating every last bit is the best part

    the little legs actually make great picks to tease out the body meat. And once you are done, pressure cook the whole shell for the most amazing lobster stock.

    Nice information, I normally only order the lobster tail and crab legs never the hole thing because it has always been a bit of a mystery as how to eat the rest of it ... I think I can do it except for the green stuff ... Seriously Thank you

    I've lived in SoCal for 28 years and I've never ate lobster, or anything that resembles a living creature on my plate.
    I'm glad that the goals of eating a lobster was mentioned because I was asking, "why bother?" Now that I'm told that its meant to be a labor of love to pick it all to bits, I feel prepared to take my time and savor every bit.... and to get messy

      Nobody does because you're not supposed to eat that. Another word for the green stuff is: crab fat or lobster paste. It's toxic, it acts as the liver and pancreas to filter out the toxic substances in the lobsters body and the FDA warns people that it poses a serious health risk if eaten. DON'T EAT IT.

    My lobster was humbly at a simple one pound he only had one claw which I didn't realize until I opened the package but it was okay hay for $8 I am so full and satisfied I made it absolutely fabulous butter garlic avocado dip with of course lemon and a bit of herbs and little bit of salt absolutely delicious

      Lobster's poop is in the tail if you flip the meat back on the top of the tail it reveals the digestive track

    I have ate lobsters once or twice before but in restaurants, so it was already deshelled. But at our home sometimes my mum cooks crabs without deshelleing, instead she cracks just the claw shells a bit using a heavy object and the rest of the work is done by our teeth.
