    I made this last night, except I didn't have fresh herbs on hand so I used dried thyme and rosemary. Came out amazing! Husband couldn't stop talking about how great it was, and I agree!

    Why do people criticize Laura. She is lovely, and quite a delightful person, who has some fabulous recipes. I, for one love her, and her recipes are an inspiration. Just as an aside, recipes are not set in concrete, you can change ingredients to suit yourself.

    I have just made this for me and the family which was a huge success! I did add my own name on it however, and drizzled hot honey over the chicken and potatoes, I also added onions and carrots. I had to sit the chicken on top of the veggies the tray just wasnt large enough as a result it did take longer than 45 mins but was worth the wait. A beautiful mid week meal, great served with crusty bread and a side salad xx

    I honestly thought that this recipe would taste really bland due to lack of any real spices.... but goddamn! The lemon and rosemary+thyme worked wonders... Amazing recipe

    Laura - My family and I tried this recipe 2 nights ago, and it's absolutely amazing! My family loved it so much, they're already asking for it again! Like you said, it's super easy and takes little prep time. The chicken and potatoes came out so delicious! Tender on the inside and perfectly crispy on the outside!     This is a great recipe and you can play around with it a lot. For example, use limes or a glass of white wine instead of the lemons. Or try different veggies -- celery, carrots, sweet potatoes, and pumpkin all work well.Also if you don't have fresh thyme, try something else, including dried mixed herbs. It's just a really good recipe.

    This is definitely going into my regular rotation. Just baked this up tonight and it has such great flavors and is really simple to make. You're right--just use whatever you have along with the chicken and potatoes. I had a couple of carrots and a couple of sad looking celery ribs sitting in the refrigerator bin along with half an onion and I threw those in as well. I also used the rosemary and thyme I had in the freezer that was leftover from Thanksgiving!

    I combined this recipe with your recipe on roast chicken and butternut squash bake. I used 2 small-medium potatoes, half a butternut squash and 2-3 carrots, seasoned them with salt, pepper and chili. I used poultry seasoning, lemon juice and fresh parsley as the chicken marinade then poured the rest of the leftover marinade on top of the bake before I put it in the oven. Mine cooked for 45 minutes and it came out SO delicious!!! This is my boyfriend's new favorite dish :)

    Try an "adobo" variation of this. Adobo is a simple Philippine dish and is similar to this, but instead of lemon, vinegar is used, instead of salt, dashes of soy sauce is used, and the herb used is bayleaf. Traditional adobo is stir fried in a wok, but since it's a variation of this dish, you can try roasting/baking adobo instead. Add some peas, carrots, and/or mushrooms if you like, that's my mom's addition to the traditional adobo recipe.

    Laura, I made this roasted chicken twice, they all turned out great. The 1st time I used lemongrass to substitute for rosemary since I didn't have rosemary in hand. This now is my favorite way of preparing chicken. Thank you so much :)

    I used 2drum sticks, 2thighs, 2wings... and... 2 (1/2) breasts... bigger glass pan, more potato's, same temp 450 and went 65 minutes to make sure the breasts were cooked and yes, they were perfect! - The DS & thighs were also perfect... the meat just fell off the bone and OMG juicy... even the breasts were a delightful moist. And the garlic ? just fabulous, the GF loved it too... she thinks I really know how to cook hahhahaa, imagine THAT...!

    are you suppose to cover the pan with foil before putting into oven or no?

      No, you just leave it uncovered, that way it gives the chicken and potatoes time to get a nice crisp on them. You could cover with foil and then turn on your broiler at the last maybe 5-10 mins of cooking but leaving it uncovered will do basically the same thing with less fuss.

    Laura your so Awesome it turned out great except your fast it takes you a couple minutes to prep. It took me 10 minutes to prep. I had to cook it for an hour and 20 minutes because I was using whole legs :)

      Michelle Evans I did mushrooms once but their high water content made all the crispy vegetables soggy. I'd sick with root vegetables or make a little well with foil in one corner and separate the mushrooms : )

      Chicken thighs will work. I wouldnt do breast because it will most likely overcook. Use legs or thighs or both. U can even use wings if u wanted

    I make this adding a large cubed onion, thighs & small legs. Last 15 minutes of cooking, add ( 1 )can each, drained baby carrots & small can of drained peas. OMG ... so delicious !!!

    I just bought a new stove and this was the first dish I made. I Changed it up a bit. Used drumsticks and thighs, mushrooms, baby carrots, one large Spanish onion chopped in 8 pieces, baby white potatoes and baby purple potatoes. Salt pepper, lemon, fresh rosemary and thyme. Big pieces of garlic still in the skin like you said. Basically same recipe as yours just changed a bit. It came out really really delicious. Thank you Laura.
    Next thing I plan to make is your Meat and Cheese lasagna.

    I have to say i really enjoyed making this dish for my family. Altho I am no italian (hispanic) i LOVE ITALIAN FOOD and also everything that you post. this is teaching me how to cook. Thanks!!! keep it up and updating :) and if you could teach how to make my favorite dish FRUTA DI MARE!! THANK WILL BE AWESOME AND HELPFUL.

    Just tried that recipe, it came out amazing,perfect and super soft, I served it with my sis with bread but instead of putting the chicken directly in the oven, I sautaged it for 2 min along with the potatoes
