  • A step by step guide to baking a sandwich loaf using a pullman pan. This was not my first attempt in a pullman pan (Shokupan or Japanese Milk Bread see • Shokupan or Japanese M... ) but this was the first that worked properly! It was using a sourdough recipe for a slightly smaller pan so I had to adjust the quantities to make it fit and it did! #breadrecipe #sourdoughstarter #japan #bread
    Original quantities are on the right and on the left are the recalculated ones to fit my pan.
    This recipe is to fit tin 8.4x4.8x4.5” Dough weight 780g. Mine is USA Pan Pullman Bread Pan 9x4x4" needs dough weight of approx 900g
    404g 100% 350 g all purpose flour
    115g 29% 100 g fed starter (100% - 80% hydrated)
    7g 2% 6g salt
    63g 16% 55g butter (soft cubed)
    14g 3.5% 12.5g sugar
    185g 46% 2/3 cups milk (160g)
    115g 29% 100 ml water (100g)
