Chorizo, Red Onion & Potato Omelette

A step by step guide to making a sort of Spanish omelette courtesy of Donal Skehan. I probably added too many potatoes so the omelette didn't hold together too well! #spanishrecipes #omelette #chorizos
225g chorizo, sliced
1 tbsp olive oil
1kg baby potatoes, boiled until just soft & halved
2 red onions, sliced on a mandolin
Juice of ½ a lemon
Small handful coriander leaves
1 tbsp extra virgin olive oil, plus extra to drizzle
6 eggs
25g butter
