Good question. There are a variety of reasons, retopologization can make the model easier for further editing, desirable subdivisional smoothing, easier UV mapping, better real-time performance and more. Does that help?

The Max Edge Length may need to be set much higher if you have a larger object than what I demonstrated with - try 10 and 100. Does that make a difference? =)
Tip: edge softness/hardness is taken into account and will give a sharper result the harder they are.
