Whetstone War Battle 4K - Tojiro vs. Morihei

  • Another epic battle. Not known for their whetstones, Tojiro came in with a heavy hitter. Morihei is made with a lot of natural stone particles and is a little softer. You have two different approaches to whetstones. The 4000 grit stones definitely make the edge shine and improve performance. We just followed up from the Green brick of joy winner and continue with the Suehiro 3k (3000 grit) and we left the edge with the burr ready to go. Check out the differences in the dimensions and the price. The price was pretty much the same if you knew where to buy it. If you didn't then it could run you as much asa a $20 difference. One is soft and the other one is hard. They couldn't be further from the other. We got the Tojiro from Ryan Swanson from District Cutlery. www.districtcutlery.com/4000-...

      Man, we keep working on this. We never know. We’ve gotten rid of that phone that my wife was using and gotten a better version. Still working on the lighting and other issues but I appreciate the compliment. We’re doing our best

    Great video as usual, Greg. Good work.
    IMO it's probably worth mentioning that Morohei Hi series was primarily created for single bevel knives. Because of the natural stone content, the polishing qualities of such stone are totally different. The contrast between hagane and jigane, texture, etc. On regular double bevel knives the difference will be minimal (mainly feel and sound). On the singles however, 4k can be used for final polishing making all the difference.

      I don’t mind doing that but I will say that the downfall is that if you pick the wrong two spots on the blade then you can end up showing a false number. The tester only picks one spot on your Blade and say you have to do multiple test for blade. I’m not saying no I’m just saying there’s an issue.

    Good vid. Too close to my 5k Rika I’m in love with but very interesting matchup. On the other end of the spectrum I just got a Naniwa New Omurato 140 brick (finally added that basement stone) - going to shoot an unboxing over the weekend.
    Btw your red towel isn’t centered on the oven. You’re killing my ocd 😂

      You'll have to take that up with the wife. The wife normally centers it. It probably got moved when we were using the oven. We do cook a lot. I'll let her know.

      Hey btw - I just returned very possibly counterfeit Atomas from Amazon - the packaging was clean but I noticed the normally blue ink area at the bottom front of the package was not blue but tan. The insert was also one piece instead of a front and back. I cannot find this in any atoma packaging on the internet from any seller. It is also not what was pictured by the Amazon seller.
      I was not comfortable keeping the plates.
      IMO they are likely not genuine.
      Feel free to mention this. I imagine there are a lot of buyers who did not notice this anomaly. I know there are a lot of counterfeit atomas on the market. Back to CNTG or Burrfection.

    I think you make good videos in general, and it's nice to see two stones side by side like this.
    A small, well intended pointer or caveat when it comes to clearly declaring a winner in a format like this, is that I think you should be sure both knives are burr free before doing the tests, or use the tests such as the paper towel as an indicator of successful/unsuccsessful burr removal.
    When the knife skips, judders and/or stops when cutting paper towel with a 4k edge there's clearly burr remaining, provided that it was cleanly apexed, and it also follows that it won't perform the tomato test well either.
    I'm a fan of your videos though :)

      Thank you. This is been the subject of discussion. There's so many arguments either way. One argument is that you want to see what you can do with just the stone. Stone versus stone. There are a lot of sharpeners who never put it on leather at all. All the Japanese natural stone people pretty much never use leather. I might have to introduce it as another phase. Meaning that I would do test without the leather and then put it on leather and see if it makes a difference. It's always been in the conversation. We're just trying to see how good you can get it with just the stone. I'll keep it in mind and we'll discuss it. I'll maybe even post it in one of the knife forums and see where it leads.

      @@nadm I get your point and agree in many ways, but I meant more along the lines of taking the knife back to the stone after seeing where it snags or hesitates during a cut through paper. Could be one or several little trouble spots that for some reason didn't turn out right, being that we're not robotically accurate, and not necessairly the characteristics or capabilities of the stone. At least I have to do this myself. Deburring strokes, test, repeat if necessary(often in my case).
      The only stropping medium I ever use besides the stones is newsprint. Like you I prefer to let the stones define the edge quality.

      @@halfdana thank you! I have found some times that if you just do a really good amount of stropping then you can really refined the edge. So I don't want to make up the difference with the strop. We always plan to do one a month. Thanks for your support!

    I would bet on the Suehiro 5000 Rika (more like 4000) and the Shapton Pro/Kuromaku 5000 (as lacking of feeling as its complained of having) will beat either one of those stones easily and both are cheaper.

    Dear Mr Greg Can you please point to me a website where i can find those Morihei wet stones!! I am really interested in them since you said that the makers have mixed natural stone compounds and synthetic. Please it's imperative i get my hands in those stones así can't find them in Amazon or eBay

      Carbon steel knife company and Hitohira carry them. There's a lot of sites to carry them now. I'm at home and coming home a car accident. You're going to order them probably from carbon steel knife shop. I've been polishing more lately and they are amazing and they feel amazing. I love them very much

    watching the knife not bite into the tomato is exactly why I have zero enthusiasm for high grit synthetic stones. dunno, I dont feel like AS sharpened on an Aizu would fail to bite into tomato skin despite being more or less a substitute for this grit range (natural stone grit equivalent issues aside). maybe Im wrong and a lot of variables and all. but I would expect to have little trouble with my Okudo suita or Nakayama kiita, both like 4.5 hardness stones, much less something less fine. the horizontal tomato test shouldnt be particularly hard, especially because that tomato didnt seem to squish very much. am I biased due to the color? to me, this is a more interesting test than paper, seeing as the point is, I sometimes recall, to make food with our knives.
    also Im sorry but the magazine ads are confirming some biases I have lololololololol.

      It is on my list to do a video where I compare knives that are sharpened on different stones to see what they can do and there’s sharp test limitations. I’ve been wanting to see a 2000 or a 1000 grit knife cut a tomato and then see what happens when you go to a 3000 or 4000 and 8000 or 10,000. I also want to compare the different stones by the different manufacturers so that might be a lot of research. The goal of the video is to test the two different stones against each other in a battle. Someday we might do some thing like a natural stone versus another stone in a synthetic at the same grit rating. You know that’s hard to do simply because the natural stones don’t come that way. There’s some wiggle room in there for some fun videos though. I have definitely cut blueberries so easily with my higher grit stones but it depends on the knife and it depends on the stones.

    Have you considered doing a head-to-head with the old green Morihei 3k vs the new fire Morihei 4k?
    It seems like you have both but they were shown in separate videos. I'd be very interested in seeing how they compare against each other!

      @@nadm I could tell from your video of the 500, 1k, 3k, 6k, 9k, 12k that you didn't enjoy using it nearly as much as the others. Does the finish and edge the 3k leaves also suck compared to the 4k?
      (Also if you have the fire 8k you could do an old vs new double-header of 3k vs 4k and 8k vs 9k).

But you were asking me to compare the new version of those stones to their old and the reason they made the news because the old one was no good. The new one has a lot of natural stone in it and it feels like a natural stone. I would be more than happy to keep the 3K stone for a sharpening stone. It’s just the other one, the 4K is so much better

      @@nadm Thanks for the comparison! There don't seem to be very many people who have both and who have commented on how they compare one to the other. The old 3k was well liked a few years ago (and can be had for quite cheap since they're clearing it out) and the fire series has gotten a lot of praise. But it sounds like the new 4k is worth the extra cost.

      @@fdmhobbychannel1808 Yeah, they just feel different. I mean the new series just has a softness and a muddiness that is good for polishing as well as sharpening. Even though I say soft and muddy also seems firm I don’t know how to explain it but they really were trying to mimic natural stone and I think they did a pretty good job

    Tojiro 4K is just a rebrand of Naniwa traditional 4K. Also Morihei should achieve a nicer finish compare the Tojiro

      I think is actually Naniwa chemical 4K.
