Hello everyone, video number 15. My signature flourless chocolate cake.
Recipe: 18 whole eggs, 3 cups sugar, 2 cups cocoa powder, 1.5 lbs butter, 1.5 lbs 58% chocolate, 4 tsp. vanilla 2 tsp. salt.
Procedure: Melt the chocolate and butter in double boiler with the vanilla and salt. Foam your eggs about triple volume. Mix the sugar and cocoa together. Food in the melted chocolate then fold in the sugar mixture. Bake at 325 for 35 minutes. Make on 1/2 sheet pan.
