Americans and Canadians can be very unadventurous about various foods, the textures and flavors. Especially those, who are many generations in and don't know their roots much or don't associate themselves with any cultures outside US. This makes your videos ever so precious, just cause you are "braving" the world and try to be openminded. Kudos to you, Alina. I was born in Russia and lived there for 17 years before I immigrated to US about 34 years ago. In my 17 years there I've been exposed to some weird foods and developed a taste for them, but most importantly, I remain open minded and appreciating of various textures, flavors and smells. But I have to say, there are many foodstuffs that unless one tried them in childhood it's hard to take a true liking to. Going to a foreign market and having a local guide is amazing! Thank you so much for sharing this experience.

There is a story about Crossing the bridge noodles.
It is said that there was a scholar in ancient times who stayed at school to focus on his studies in order to take exams. His wife brings him food every day, but because the school is a bit far from home, the food is already cold when it is delivered. So his wife came up with a solution, which was to cut the meat very thin to make it easy to cook, then make a pot of hot chicken soup, and cook the rice noodles, then put all of them into a food box. Because there is a lot of oil on top of the chicken soup, it can maintain the soup's temperature for a long time. When she brought the food box to school, her husband could cook the meat in hot chicken soup and put the cooked noodles in, so he could eat hot food.
Because there is a bridge between their home and school, and this wife need to pass a bridge when delivering the food box, people later call this cooking method "cross bridge", and this kind of noodles is called "Crossing the bridge noodles".

I worked in Kunming in 1989, 1991, 1993 and 2000. I cannot believe how the city has changed. In 1989 the population was around 3,000. Most of the restaurants were just little places on the street. There were more donkey carts than automobiles and we had to boil our drinking water. Bicycles were the main mode of transportation.
By 2000 things were more modern and I believed the population was around 6,000. By our standards it was a city that was far from modern and still just local street markets. There were department stores, but nothing like the ones in the USA. However, you don’t go to foreign countries expecting them to be like home. I enjoyed the time that I spent there. The people were wonderful and they wanted you to see everything that China had to offer . I was encouraged to travel which I did and was able to do things that tourists are not usually able to see. But, it definitely was not an easy place to live the first couple of times I was there. After I was there often when I would go out on the streets I would see people that I had known before!
When I was there in 1991 I was there before my husband and when my husband got there we were going to the Green Lake hotel. A group of the minority girls saw him from a distance and started running toward him waving , smiling and yelling. What a wonderful place!

Kunming spells great weather & perfect air quality (AQI) - spring forever! It’s flora & flora is amazing with lots of historical ethnic cultures preserved for reference. It’s Karst Landforms are a unique Stone formation and it’s parks and lakes are also wonderfully beautiful. It’s become a tourist friendly spot for food and cultural immersion by interested parties seeking their roots & studying history. Looks like your short stay paid off with a brief tapping in on the ethnic village, old town and city center, but the stone Forrest aerial shots would have been epic for Vloggers ✅👍🫡Next time then 🙏 Happy Adventures 👍

That "sweet white wine" thing... The basis of it sounds like it's just Jiuniang 酒釀 (or Amazake 甘酒 in Japan), rice that's been partially digested by Aspergillus oryzae (Jiuqu 酒麹 in Chinese, Kome Koji 米糀 in Japanese), so all the sugars got pulled out of the rice but it hasn't gone through fermentation yet so there's little to no alcohol inside. Did they actually add milk to it? That's something we don't hear it being done in the Jiangnan region(near Shanghai) where we typically cook Jiuniang with glutinous rice balls for a simple dessert called Jiuniang Tangyuan 酒釀湯圓 (or in our region the mochi dumplings are called tandu'zi 汤团子).

Plus Chinese like chewy texture in-food such as the chicken feet, sea cucumber, sticky rice cake, animal intestines etc.

It’s unfortunate that you didn’t have a chance to get off the beaten path to visit the Kunming Dog kennel. The iconic Kunming dog is China’s national dog developed by the People’s Liberation Army in the 50s by crossing the German Shepard with local dogs. Because of the isolation of the Kunming villages , the PLA Kunming Dog breeding kennel has the only gene pool of the original German Shepard from the 50s in the world. The Kunming dog is a very versatile dog that’s very easy to train and very protective. And it’s used extensively in the Chinese military. Kunming was the breeding station for these dogs because of the excellent animal husbandry of the Yi people who rival the Germans and Dutch in raising animals.

Dali city is another popular tourist destination that sits between Kunming and Lijiang. I have been to Yunnan twice. My itinerary would normally be Kunming - Dali - Lijiang- Shangri la, or part of it. From Shangri la you may move on to Lingzhi of Tibet. Dali is famous for its huge lake called Erhai.

Wow!!! You're lucky to have a personal guide that's a local. Even more, you got to try the steamed chicken feet. I don't know what Kunming chicken feet tastes like, but I do enjoy the Cantonese version a lot. We eat chicken feet very often in Thai food because of the influence from Chinese diaspora here in Thailand. I am planning a trip to Kunming again, but this time I will bring my family. I'm learning a lot from your video. Thank you.

So many delicious food in Yunnan's open markets!!! Basically, all the ingredients that Thais eat I think. The eels would definitely be welcomed by Thais. However, I never ate loaches before, I just kept them as pets in my fresh water aquarium. However, the loaches I had were bright orange, from the Amazon River. Continue to learn a lot from this market tour. Awesome!!!

My hometown is Kunming, and there are many cities in Yunnan that have a climate similar to Canada's. I'm so happy you could come to my hometown, I haven't been back there for 4 years since the epidemic. You wouldn't believe how much I've seen my hometown change from your videos lol, I hope you have a good trip!

Chicken feet high in collagen. This collagen content may help relieve joint pain, aid skin health, and prevent bone loss. But you have to know how to cook them to make them tasty though. And only 53 ethnic groups have their own languages. 22 groups used total of 28 written languages. All languages, including Mandarin Chinese and ethnic minority languages, are equal in China. So both Mandrain and ethnic minority languages are also used government documents in each ethnic region. This is far cry from certain countries occupying non-English speaking countries and never spend any resource to develop local languages as official government languages.

good on you for trying the dreaded chicken feet, well dreaded for westerners that is lol. there are a lot of foods especially in tourist areas that are a bit gimmicky and even most chinese don't eat, but chicken feet is extremely popular among not only chinese but also in many other east/south east asian countries so there has to be more to it. honestly I only tried the cantonese braised in soy version which is pretty soft so might be easier to eat but it's good enough to reorder so... lol. good for the skin I hear so if you want your teenage years back, eat more chicken feet 😅
