@@JohnnysCafe_ This is referring to "heating" and "cooling" foods. Think of it as a sort of typology not too dissimilar to foods relating to certain humors of Hippocratic medicine. In this typology, you don't want to overload on either of them, so if you are going to eat a bunch of fried foods (heating by nature), you should have some foods that are cooling to balance it out. In practice, this just ends up being a sort of pairing system.

The black one, or what you usually call "century egg" is made from preserving it with quicklime, salt, clay, ash, which gradually increases the PH towards the alkaline side. This is eaten "raw", and has a pungent smell which some people like it and some done. In Southern China, we normally eat it with porridge, or mix it with tofu and soya sauce, sesame oilr. It is supposed to reduce heat inside your body, so when you have a soar throat with eating too much fried, spicy stuff, you take this to balance off. The white one is preserved with salt and ash only, without the quicklime. This tastes salty and it has to be cooked. In Southern China, we put the egg yolk in moon cakes, and rice dumplings with bamboo leaves. Egg yolk are used in a lot of dishes like stir frying it with crab roe, and so on so forth. Just be creative!

Please do try the 1000 year old egg / century egg (the black eggs) they are absolutely delicious especially when served in rice porridge! Don’t let how it looks scare you! 😊 I learned when travelling to China to just try everything because often time it actually tastes amazing and you’ll get over the way it looks. I would also recommend trying a donkey burger with donkey soup (best to eat together / dip!) it is so so so delicious!! 😋

Grocery stores generally order goods from these markets, and the store rent is more expensive than farmers' markets. This is the case in China.
Love these kind of farmers markets in Asia, with so so so many small venders, so the price won't be monopolized by a handful super big supermarket owners.

Not only westerners, some Singaporens also insist that Chinese people are short of food and suffering from starvation. Around 2010, I was working in Singapore and had the chance to chat with Singaporen face to face. An impressive experience was that some Singaporen insisted that I made a wise decision by leaving poor China to escape starvation there and congratulated me for the ability to get enough food in Singapore. Despite I firmly expressed to them I did not the experience of famine and starvation, none of them trusted me and were angry saying I was lying for 'face'. Similar story happened in other countries than Singapore where the Singaporen immigrants think those from China moved overseas because of China being poor not able to supply enough food to the people. Some westerners who ever worked in Singapore told me they feel Singaporen discriminated Chinese from China and asked me why. I believe Singaporen would give the answer 'because Chinamen are not well behaved', but this reply is definitely not true since some Singaporen are not well behaved as well and well behaved Chinamen would be discriminated too. The true reason from my perspective is that Singapore as a tiny country is much more wealthy than China and Singaporen thus attribute this better wealth status to their superiority over Chinamen in terms of gene, IQ, EQ, etc. Not only Singaporen, but some Hongkongers and Taiwanese believe they are superior to Chinamen, in spite of the fact that majority of people from these three regions are descendants of refugees from China mainland. It is disappointing to notice that wealth growth does not make people of these three regions more humane and open-minded, but more arrogant. the stem vegetable's name is 莴苣(wō jù), can be also called as 莴苣笋(wō jù sǔn) or 莴笋(wō sǔn). The stem part is crunchy and fresh with a little bit sweet taste, some people also eat the leaf part although it's a bit bitter, bcs in Chinese medicine system the vegetable is way "凉"(liáng, which means cool), reduces fever and causes diuresis, invigorates the circulation of blood, so very good for health.

Yes the vegetables and meat inside the market is cheaper than the supermarket. It’s also fresh. They are delivery to the market every early morning. Yunnan is very famous for different kind of mushrooms as well as asparagus as the climate is best to grow them there in the mountain. By the look at the Chinese hamburger, it’s looks way better than the Chongqing one. The lady put lots of ingredients inside and it’s cheap. Anyway guys if you are still there have an amazing time . I showed this video to my mom, and when she saw you guys at the authentic food market in Kunming, buying a Shaanxi specialty (meat buns), she was so angry that she questioned me: didn't anyone tell them what the Yunnan specialty was? So here I am. If you guys are still in Kunming, you can try rice noodles, there may be hundreds of them in Yunnan, just pick your favorite. I also highly recommend trying the chicken in the steamer (Qi Guo Ji), you can taste the chicken broth without adding a drop of water!

Recommend you to visit LUGU Lake. Most beautiful lake in Yunnan Province. The Mosuo people, who are living around the Lugu Lake , have their own unique marriage custom - living in the matriarchal way. You can visit Lijiang and then Lugu lake. The old town of Lijiang is the most popular town in China.
Roger Moore! What a great name you've given to this Chinese burger. Ro in Roger sounds similar to the Chinese character Rou (肉) which means meat. Ger in Roger sounds similar to the Chinese word Jia (夾) which in this context means sandwich as a verb. Moore sounds similar to the mandarin pronunciation of Mo (饃) which means steamed bun. China has a very large scale of vegetable production, with not only large greenhouses but also many small farmers growing their own vegetables and selling them at markets. When I travel around the country, I am most interested in visiting local markets to learn about the unique species and goods available there. Two years ago, I visited the Zhuanxin Farmers Market in Yunnan, and it was indeed very lively. My personal favorite was the tofu pudding with rice noodles, a combination I had never thought of but found to be incredibly delicious.

the pumpkin-look green thing is called 姜柄瓜 (jiang bing gua, pumpkin/melon with a ginger handle). Yes, it is a type of pumpkin grown in high attitude. Not sweet. Ppl cook it with ham or pork.

The stem part is crunchy and fresh with a little bit sweet taste, some people also eat the leaf part although it's a bit bitter, bcs in Chinese medicine system the vegetable is way "凉"(liáng, which means cool), reduces fever and causes diuresis, invigorates the circulation of blood, so very good for health.

The powder she sprinkled on the potato chips is seaweed. Yes the vegetables and meat inside the market is cheaper than the supermarket. It’s also fresh. They are delivery to the market every early morning. Yunnan is very famous for different kind of mushrooms as well as asparagus as the climate is best to grow them there in the mountain. By the look at the Chinese hamburger, it’s looks way better than the Chongqing one. The lady put lots of ingredients inside and it’s cheap. Anyway guys if you are still there have an amazing time . I from Kunming! I showed this video to my mom, and when she saw you guys at the authentic food market in Kunming, buying a Shaanxi specialty (meat buns), she was so angry that she questioned me: didn't anyone tell them what the Yunnan specialty was? So here I am.
If you guys are still in Kunming, you can try rice noodles, there may be hundreds of them in Yunnan, just pick your favorite.
I also highly recommend trying the chicken in the steamer (Qi Guo Ji), you can taste the chicken broth without adding a drop of water!
肉夹馍 is the best! I almost eat roujiamo everyday. So delicious and that's the reason why you can find it in every corner of China.

I noticed you might be using the hotel’s electric kettle to make instant coffee or for other things. Just a tip from a local: we usually don’t use the kettles in hotels when we travel. Sometimes they might not be as clean as they seem. If possible, I’d recommend getting a thermos and filling it with hot water from small local eateries.
Of course, this is just a personal suggestion. Once again, welcome to China! If you get the chance, I hope you can visit my hometown, Nanjing, the “Six Dynasties Ancient Capital.” It has many beautiful sights and rich culture, and I’m sure you’ll fall in love with it.

The Mosuo people, who are living around the Lugu Lake , have their own unique marriage custom - living in the matriarchal way. You can visit Lijiang and then Lugu lake. The old town of Lijiang is the most popular town in China.

Roger Moore! What a great name you've given to this Chinese burger. Ro in Roger sounds similar to the Chinese character Rou (肉) which means meat. Ger in Roger sounds similar to the Chinese word Jia (夾) which in this context means sandwich as a verb. Moore sounds similar to the mandarin pronunciation of Mo (饃) which means steamed bun. So Rou-Jia-Mo (肉夾饃) is meat sandwiched in a bun. Enjoy your Roger Moore!

China has a very large scale of vegetable production, with not only large greenhouses but also many small farmers growing their own vegetables and selling them at markets. When I travel around the country, I am most interested in visiting local markets to learn about the unique species and goods available there. Two years ago, I visited the Zhuanxin Farmers Market in Yunnan, and it was indeed very lively. My personal favorite was the tofu pudding with rice noodles, a combination I had never thought of but found to be incredibly delicious.

the pumpkin-look green thing is called 姜柄瓜 (jiang bing gua, pumpkin/melon with a ginger handle). Yes, it is a type of pumpkin grown in high attitude. Not sweet. Ppl cook it with ham or pork.
