Lies can only be maintained at a distance. I am sure that all of these guys have heard awful things about China. But once they arrive, they have eyes and ears, and the lies that they have been told simply won't match up with what they can see. In time, enough people from the West will come and visit China, and they will see that we are a bunch of hard working, prosperous people who are just crazy foodies. We don't want to conquer the world or change how other countries are ruled. We just want to make money, live in peace, and maybe sell you a hot pot or two.
This tour guide's Mandarin is even more standard and authentic than most Chinese people's, and he also masters the authentic "erhua pronunciation", that's awesome!.

Dang! Garth really knows his stuff! I was born in Beijing and lived there until I was 19, and all of the local delicacies you guys tried are legit! Now granted, Food menu in Beijing is highly diversified by itself, because of the wars and clashes/mixing of cultures throughout the centuries. There are dishes categorized as "Gong Ting Cai" or royal dishes that were only available to the Royalties since the Yuan and Ming dynasty. There are halal dishes like Garth said, there are also traditional dishes that the average citizens enjoyed on a daily basis since 500 years ago that are still popular today. I love that even the smallest stalls maintain at least a basic level of hygiene and cleanliness. Example the lady with the donkey in the dust kept it in the container to keep it warm and everything looked clean and delicious.

燕京 (Yan Jing) means the capital of Yan (燕国)state back to the Zhou (周朝-春秋戰國) dynasty period, about 1100BC to 222BC, where the current Beijing is, then all the other six states Han state(韓國), Wei state (魏國),Zhao state (趙國), Yan state (燕國), ,Chu state (楚國) and Qi state (齊國) were unified by Qin state (秦國), commanded by Qin Shi Huang (秦始皇 贏政).

OMG, this man even knows to go to the farmer's market and roadside shops. He knows better than many young people born after 1995 in China where to find the most cost-effective and authentic food. Farmers' markets are places where retailers gather who buy goods directly from production areas or distribution centers. They are usually cheaper than large supermarkets with complete supply chains, and have a full range of products. They usually sell cooked food and semi-finished ingredients, such as noodles, mantou.

As Chinese expatriate from Shanghai, I learned a lot as well, and I haven't tasted all these breakfast from Beijing lol. Again, loved you guys taking ordinary Chinese on the streets, that's special, you are really professional. If there's one thing missing, you probably can introduce every dish you tasted actually cost 1 or 2 dollars, so people around world would appreciate. The beauty of Tofu Pudding is it does not have a strong taste of its own, so it basically goes with any flavor you add to it. I am from Northeast China myself, so we eat it like in Beijing, with a savory topping, and you can add vinegar, chili oil, garlic sauce and chive flower paste to taste. But I've also lived for years in HK where Tofu Pudding is served as dessert with syrup and sugar. In Fujian and Taiwan, it is also served with syrup and all kind of sweet toppings. Tofu Pudding is very easy to make, you can make your own with a blender or cheat with store bought silken tofu.

OMG, this man even knows to go to the farmer's market and roadside shops. He knows better than many young people born after 1995 in China where to find the most cost-effective and authentic food. Farmers' markets are places where retailers gather who buy goods directly from production areas or distribution centers. They are usually cheaper than large supermarkets with complete supply chains, and have a full range of products. They usually sell cooked food and semi-finished ingredients, such as noodles, mantou.

As Chinese expatriate from Shanghai, I learned a lot as well, and I haven't tasted all these breakfast from Beijing lol. Again, loved you guys taking ordinary Chinese on the streets, that's special, you are really professional. If there's one thing missing, you probably can introduce every dish you tasted actually cost 1 or 2 dollars, so people around world would appreciate. That's how affordable people live in China and enjoy themselves.

The beauty of Tofu Pudding is it does not have a strong taste of its own, so it basically goes with any flavor you add to it. I am from Northeast China myself, so we eat it like in Beijing, with a savory topping, and you can add vinegar, chili oil, garlic sauce and chive flower paste to taste. But I've also lived for years in HK where Tofu Pudding is served as dessert with syrup and sugar. In Fujian and Taiwan, it is also served with syrup and all kind of sweet toppings. Tofu Pudding is very easy to make, you can make your own with a blender or cheat with store bought silken tofu.
