Khao Soi is a curry noodle, usually paired with a chicken drumstick, that is one of my all time favorite dishes. If you haven't tried it, you're missing out big time.

My grandma used to make khao soi on special occasions. The last time I had anything like it was during my trip to Chiang Mai. During the pandemic I tried to recreate it with six different recipes from cooking schools, cooking websites, and cousins. I can't recreated it. That food memory is still so elusive.
Love how Chef Anne made you work for your food. Bri can really work a mortar and pestle and has great taste in liquid refreshments. Still fascinated. Could watch you eat all day.
These Thailand videos are bringing me back to when I visited Thailand back in 2016. I forced my friend to do a cooking class with me while we were in Chiang Mai and even he enjoyed it. Was so cool to be taken to the local markets and see the garden that the school would get their ingredients from. I also made Khao Soi and it was so good.
As Thai, I approved every menu he cooked so far. Looks so delicious and correct way of cooking.
Wow. I love that the recipe showcases the mortar and pestle in the process. I don’t think the average person realizes the details and dedication to the process that goes into these dishes. Love it ❤️

Yup I still remember chef Anne's sassiness. She got a good sense of the group and matched our sense of humour. One of our favourite memories from our trip to Thailand :) FOOD WAS SO GOOD.
