Thank you for sharing this video. In my mind, it kinda sucks to see that smoker go, but I think you are doing the right thing and selling it. My only critique is that the paint on it looked like crap. It is interesting to see the name change. But I will say, I feel you should have left the name alone. You know you go back and forth on things. I honestly believe you make a knee jerk reaction. Referring to you as Knox Ave is a dumb name. You have lost yourself as a brand. And that is what you should be standing behind. You are an amazing cook, and over the past 6 weeks, all of the video's I've watched is really great. So "Knox Ave BBQ' is that the street and location where your business will always be. If you branch out? what happens when you do another location. Will that be 20th Street BBQ? You did not think this through well enough. Mistakes were made......

45 minutes just to get to the pit?!?!? No way. Not worth it. That ads two hours to your cooks for travel time, plus you have the clean up. Good decision getting the 250 primitive. Can’t wait to see all about it!

I think it's always great when people leave their early videos on the channel. Allows us to get to know you a bit. I really hate it when RUclipsrs delete old videos...as, honestly....they are often the freshest content...before the channel becomes very formatted.
I still feel like my content is as free flowing as it was before, but I’ve just gotten better talking to myself in a room or in my backyard. lol
@@knoxavebbq Ya, I can see that being a learning curve. However, it's nice to see the development over time....hard as that may feel for a content provider to look at...lol. The learning phase if so often more interesting...than when the presentation becomes more polished. Maybe that's just me. With many others, I end up starting to shortcut vids....once it's just about another cooking idea, especially when RUclipsrs start to produce their own rubs...and go heavily into promotion. That's why I like people like Jeremy of Mad Scientist....who has stayed more in the learning and teaching phase...providing honest content, virtually above all else. Your presentation is also very good...down to earth...and appealing.

I’ll be honest with you, all of those kind of pop ups I’ve done illegally. Technically doing that isn’t really legal. Haha. All rules and regulations are different so you would need to check with where you live.

Let me first say that I love your channel. I love BBQ, but other foods, too. As a life-long cook, and having worked under many Chefs (and many nationalities), AND coming from a machinist background ( if I can follow a blueprint I can follow a recipe ), my true goal is to have that “touch” in cooking that I had in machine work. The real human issue, is that ALL people have a NEED to influence their environment, whether CONstructively, or DEstructively. It’s in everybody. Recognize the things you really like doing, and “think outside the box” not only pertaining to your present skill set, but the things that brought those skills alive. I know exactly why you got rid of it, it's not easy to maintain it. I own a 110gal pit and I can't even imagine owning a 1000 gal and all of the maintenance that comes with it. Congrats on your new cooker. All the best 👍

If owning a restaurant that does large volume, the 1000 gallon makes sense. For pop ups/ catering, as well as regular backyard BBQ, the 250 is where it’s at. Great choice. Love primitives 250 wagon. Congrats and no doubt your next chapter will be successful. Keep up the great content.

I love cooking for people but the idea of having my own full time bbq restaurant sounds horrific. The pop-up idea is a great middle ground and I’m excited to try it!
Ha! I think I gotta do a lot more before I can live up to that name. Yea man, just because you like bbq doesn’t mean you need to quit your job and do it. Haha. Keep it as hobby or a side project until you really don’t wanna do anything but that. But when you get to that point, think about it again. Lol. It’s not an easy thing to do, especially if you don’t have other ppl helping you.
@@knoxavebbq my thought is if I ever do it for money, it’ll be as a really involved hobby, not my day to day livelihood! But the pop-up, am I correct in assuming that it’s a one-off event? I’m sure there are licenses needed and what not, but the stakes are much lower than having a food truck or a brick and mortar, right? Seems like a great way my buddies and I could test it out.

I had no idea you had a 45min drive to your pit. That’s absolutely brutal and a perfect way to kill a buzz & passion for cooking bbq. I just received my Primitive 500g on a trailer about a month ago and I just walk out my back door (it cooks like an absolute dream, btw). I can’t imagine having to make such concessions just to do a cook. Smart to get rid of it, especially since it is an asset you can liquidate to use for things now.

I’m curious to know, how did you have backyard pop ups in the Chicago area without the health department getting involved? I’m assuming you were charging people. I am no longer in IL, but I currently live in an area that would be great for these and I’ve often thought about it, but I can’t find any health department rules or cottage food laws that allow for it.
Best advice is to keep it as low key as possible. Doing it in the backyard like that is technically illegal, but I was still teaching back then and just doing it for fun.
Can’t wait to hear more about the new 250 ❤. I hope you still post work-out content from time to time.

@Boosted Billy Don't believe the BS certain "news" outlets try to pitch. You know how almost every town of a significant size has a "tough" part of town? Same thing, but Chicago is a big town. It also has wonderful neighborhoods that make up the vast majority of the city. I lived in Chicago for 6 years, and I miss it every day.
