Although my advice to you knowing a good tasting chip shop from a bad tasting chip shop they can both look amazing but taste so different. My advice is to use beef fat / tallow to fry or beef dripping as we would say. This seriously imo makes soooooooooo much fucking difference man!!! You will definitely need to fry the chips and fish twice to get a good crust on them so just be careful with the batter when removing the fish from the first fry. No need for tartar sauce, just get Canes sauce 1/2 cup mayonnaise 1/4 cup ketchup 1/4 teaspoon Worcestershire sauce Just enough black pepper to get the spot

Flour all sides of the fish, dip all sides in egg wash, place and coat all sides in the panko. Get oil hot to 350 or like your frying fried chicken. Lightly brown all sides then lay on wire rack to drain. Dice up 1/4 red onion. 1tsp of sweet pickle relish, 1/4 tsp lemon juice, 1/4 tsp wortetshir sauce, best foods mayo approx 1/4 cup mix then place in frig for at least 1 hr. Make the tarter sauce first before the fish.
Honey if you deep fry pieces of chicken at 375° the coating will be burnt to a crisp by the time a big thigh is done internally. I’d suggest you get a quality digital thermometer and understand what temperatures you’re really deep frying at. 😏
Learn how to heat your oil properly and you never have to worry about this. Same for not overcrowding the pan. Way more clever to learn how to fry properly than to throw paper in oil.

Add vinegar to water for fry boil. Regular flour + Rice flour + pinch of baking powder. Season with curry powder, garlic, cayenne, salt and pepper. Mix, add carbonated water and hot sauce.

McD does it's fries, hash browns, and chicken in the same oil, although some may dedicate another fryer for chicken alone. They have a dedicated fryer well for Filet o' Fish patties. Never put sausage or bacon in deep fryers as that fat wrecks the oil.
