The premise of a family forgetting one of their kids at home while they went on vacation is a very specific one, and a lot of care had to go into the writing, so that the family (especially the mother) didn't come off as unsympathetic to the audience. The family had to be very large, and the situation had to be very chaotic, so there had to be a lot of characters introduced very quickly and efficiently, including the protagonist Kevin. The writers pulled off a minor miracle by making the film as well as they did.
The thing is that despite all that, the family still isn't sympathetic. They continuously talk down on Kevin and punish him even though half the time he was just retaliating for being mistreated.
The wedding ring could be for a lot of reasons. He could be married, but it could also be a keepsake from his first robbery that just happened to fit him. And maybe like you said to make him seem more likable. He could also be a widower. 😊
There is another, simpler answer. Joe Pesce, who played the part of Harry, was married to model/actress Claudia Haro at the time of filming, divorced in 1992, just after Home Alone 2 finished filming.

I'm sure we all picked up on this: Kevin going through Buzz's private stuff. Among the firecrackers, one can spot the chips or so that Kevin later on has next to him when watching 'Angels With Filthy Souls".

I put a doggy-door in the wall of my previous house. I left it there when we moved (since it's now basically a permanent fixture of the wall without doing some serious reno). The new owners didn't have a dog, so now they have a house with a doggy-door but no dog. And yes, I put another doggy door in the wall of my current house.
Another detail : in this scene at 2:53 the van says dodge (a car brand that made the van) and Kevin luckily dodged the van by just standing there while harry stops the van, so that’s another bonus detail and funny joke in the movie
In observation & if you're interested, Kevin's value is not very high in the family, he doesn't really get any respect at all. More care is taken to mention how the dog is taken to the kennel, Kevin gets picked on & put down by everyone, especially Buzz & Uncle Frank, Kevin's airplane ticket gets thrown in the trash by his dad when his dad is cleaning up the spilt soda & wet pizza when Buzz pretends to throw up his pizza & Kevin gets angry & pushes Buzz. The entire family ignores, neglects & completely forgets Kevin the next morning, everyone basically cares more about themselves, the trip to Paris or anything else, BUT KEVIN, the only person who remembers Kevin is his mom, old man Marley (both out of concern), & Harry & Marv (out of getting rid of him). Coming from a similar childhood where I was ignored the same way in my family, I noticed how his family treats him everytime I saw this movie. The only way my family began to remember me is when I moved out & started living on my own & I told my family the wonderful things I was doing around the world.
I know Bob Saget wore his wedding ring in the first film of Full House but the producers said he had to take it off so it can make it look like he's single in the rest of the shows. But ya it's funny how Harry is still wearing his actual wedding ring. Also I noticed Fuller's pillow and blanket are the same as DJ's bed from Full House as well.

I have an iconic movie suggestion you should make for behind the scenes after Christmas season is over. Have you seen Ghost (1990) that had Patrick Swayze? It’s an iconic beloved movie that teenagers and adults love to watch and it’s PG-13 if you’re wondering since I knew you dislike watching rated R movies. If you haven’t watch it, I highly recommend.
