    May I ask why you de-seed the chillies?

      I haven’t personally experimented with this, but there are two reasons. Seeds can add a bitter taste to things and the texture can completely change.
      In my experience with this sauce, the dried chiles had nice heat to begin with, so I didn’t see a drop off in flavor by de-seeding them
