300g pumpkin 150g granulated sugar 150ml water 30g Ginger - You can use as much or little as you like depending on how "spicy" you want it. 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon 1/4 teaspoon all spice 3 drops vanilla essence Blend it all together until smooth. Strain through seive until you're left with a "dry" paste in the seive. If there is sugar that still needs to dissolve, add to a pan and warm slowly and stir to dissolve. If you want it more sweet add more sugar. Let it cool before use.
