The difficulty has been overstated. Play with the blasphemous blade, use mimic, and collect the early, easily available, scadutree fragments and revered spirit ashes to upgrade you and your spirit ashes. You'll have a fun time. There's blasphemous blade build guides on youtube so follow one them and you're good to go. Also learn where to find those early scadutree fragments and revered spirit ashes, and learn how to stack buffs. Very important to make things easier. This way you'll have fun. This DLC is too good to pass.
I’ve had more trouble with certain levels in Mario and even Zelda. If you play the easy way and not brute force progression then difficulty isn’t a concern. Really should give it a go.

Only people I've heard not liking the series are those who only completed one of these games and then dropped the series, or the people who used co op to get through the difficult sections. If you know you're not up to getting through the frustration of "getting good" then I think you're making the right choice of not playing the DLC. I think Elden Ring specifically has this problem that it let's the player get through the game pretty easily in the beginning (if you focus on collecting upgrade materials, skip the hardest bosses, use spirit summons etc.) and then in the last 20% of the game hits you with brutal unskippable skill checks making the game suddenly feel tedious and unfair. Other Soulsborne games throw you straight into brutal challenges and use mechanics that purposefully punish a novice player making it all the more sweeter when you by the end of the game (or during a second playthrough) feel like you've gotten over the punishing and confusing novice learning curve.
The first time i watched your video i saw it in red handwriting bottom right hand side of screen. Just neatly inthe corner. It totally confused me, but after reading your reply and then double checking to see if i could see it again..... i cannot. My guess is that it must have been some kind of graphical overlay from the youtube app or something, perhaps from a recent video i'd watched. But it just looked like a signature like that which you'd see left by an artist on a painting. Sorry, didn't mean to waste your time. (Agate Dad is a youtube channel i watch) Seen as i have your attention, would you mind telling me how you make these videos. They're very cool, would be great to see a game done in that fashion. 🙏
