Sada roti does not have sugar in it. You add sugar to paratha roti or bakes essentially to help in keeping it soft after it’s cooked. Also, because it’s a quick bread, you don’t need to knead it for that long. But nice end product!! The sugar you added enhanced the darkening of the end result also.

My Sada takes 20 mins total and I get the same effect. All that long story is not necessary. The only time I knead that long is when making bread.
