I had the pleasure of eating at Cagen a while ago with my family. Absolutely astounding experience. The cards in the video are the ones that he showed us before each course, and it was such a pleasure watching a master chef prepare everything right in front of us. I was dreaming of fish for days afterwards. I highly recommend Cagen for anyone in the area!
I think this is the most beautiful, perfect food prep video I've ever seen. Such a master should be considered as creating not just food, but art with food. It was just magical to watch. Great choice of background music as well.

I went there for dinner tonight. The quality was absolutely amazing. The setting and scenery of the restaurant was absolutely like you were in Japan. You know I have to say this. This channel's camera man and the video editor are really skilled. Im not saying this only from this video but others too.
I cannot eat sushi or sashimi without wasabi because that unique horseradish has spicy quality that makes surprising taste phenomena inside mouth. Remember, you don't want to put wasabi into soy sauce and mix thoroughly before dipping because that will lose spiciness quickly. Adding little wasabi to the center of sashimi / sushi gives unevenness sensation that somehow you can sense sweetness at edges of that sashimi / sushi. In this video, I love how he adds wasabi to those fish display on ice bowl and wooden glassed tray case to add green color representation as well. Looks exquisitely elegant and delicious!
Shoutouts to the team behind this video. I could have done without the Dutch shots and intentional shaky cam but this was produced next level from what I usually see from Eater.

I love omakase sushi. I think it's so much fun to sit at the bar with the chef and have him create delicious sushi for you. He gets to see what you like and then can cater the subsequent fish to what you enjoy. Man I miss sushi. Being preggers = no raw meat = epic sad face.
