Just like Greek potatoes except we would use Feta and add a bit of Lemon and Oregano :) I have got try try Manchego Cheese, never had it before. I'll have to try this also one day. Have a beautiful birthday filled with love, happiness and health.

Looks delicious. I'd add a sweet potato in for variety and a little extra nutrition but anything with potatoes is good.
