OH Just a thought. Like you said I know you mentioned you would probably go with a half double if you were to do it again just because of how tight the single crochet is, but I was just thinking that a waistcoat stitch single crochet would have totally given it that knitted look vibe!!! I use that stitch on bags that I make so the weave is really tight. Looks more like knit but not as stretchy as knit. Like I said it does make a really tight weave. I may have to try this out. if I ever get the time.
I'm using a 4.5mm and the size of the vest for me was 26" x 18" laying flat! You can easily adjust the measurements by measuring your chest across and dividing by 4 (this will be the inches you need to make each square)
I honestly love both the crochet and the knitted look! Now I definitely have to do the vest in both looks~

I didn't even think of a waistcoat stitch! that probably would have made it look more knitted for sure!
That or tunisian crochet using the tunisian knit stitch.
