LEMON LOAF:
1 3/4 cup gluten-free flour, sifted
1 1/2 tsp baking powder
1/4 tsp baking soda
1/3 cup cashew yogurt
1/3 cup oat milk
3 tbsp lemon juice
1/4 tsp fine sea salt
3 lemons, zested
1 cup cane sugar
3 eggs
2/3 cup olive oil
2-3 tbsp chia seeds
GLAZE:
2 tbsp lemon juice
3/4 cup powdered sugar, sifted
