Truly the most underrated channel on the internet. These recipes are authentic restaurant quality if not better, and the videos are super informative. The no-cuts video quality is also excellent.
To top it off, Rick is charismatic and truly enjoys the craft. I feel like I’m being given the key to Mexican cuisine every time I watch this channel.

It’s crazy, we literally have access to hundreds of recipes from one of the best chefs in the world that is also one of the best teachers in the world who also has one of the purest passions for Mexican cooking in the world and spent his life studying it. Priceless.

I could agree but I felt disappointed wwhen I watched a few videos of his restaurants i Chicago and no one of his Chefs were Mexican.
So I think Rick is hipocrit
One of my friends was a chef there and he's Mexican and he paid for his education. He also has his chefs travel to Mexico to learn and experience. Rick reflects the beauty of cooking, he is not Mexican but by studying and learning in Mexico he has earned authenticity. I'm grateful he is sharing our beautiful culture and showing its as much fine dining as other cultures. Been to many of the restaurants and he represents our cuisine beautifully. Thanks Rick!

Rick, the best meal I have ever had was at your place in Chicago. Frontera Grill. It was almost 20 years ago and I remember everything about that evening like it was yesterday because of the wonderful flavors. I remember my Wife getting a bit overserved on a couple margaritas, I remember the interior of the place, I remember the attentive and almost Fonzie cool wait staff, but most of all I remember the duck breast in green mole sauce.
I have never experienced flavors like that before or since. I'm 56 now. I can honestly say that it was the best meal of my life. I still think about it. I live almost 1000 miles away from Chicago and want to jump on a plane right now to experience that again. That one dinner will stay in my memory forever. You know how conversations about food always come to the same question "What's the best thing you've ever tasted?" Everyone says something and interrupts themselves to mention something else, after a while they have talked about dozens of meals. The conversation can go on for hours. Not me. The best dinner I ever had was at Frontera. I don't even have to think before I answer that question.
I wish I could describe the flavors, but I can't. Language falls short.
We were in Chicago visiting two years ago. We walked into Frontera Grill without reservations. They said Sorry- We are out three weeks on reservations. But then they looked and asked, " do you mind sitting at the bar"? We said - 'YES, PLEASE.' It was phenomenal. The flavors are transforming- an unforgettable experience.
Thank you in so many ways Mr. Bayless. I cook Mexican 5 days a week, and have for the last 30 years.
Our Chicago friends could not believe we got seated without reservations.
I love your recipes! This is one of my favorite of your Mexican dishes. I gorge myself that someone needs to wheel me away from the table!

I used this recipe with a few small tweaks (less achiote, pineapple juice instead of water) and it was absolutely phenomenal. Even better than any of the best Mexican restaurants I've found. Thanks Rick I've been looking for a great al pastor recipe forever!!

Some of these comments make me wonder if they actually watched or listened to anything said in the video. This man knows more about Mexican food and culture then most people know about their own "home" culture

Instead of water use pineapple juice. The acid will help breakdown the meat.
i did that and it burns. i did it his way and it was significantly better and no burning.

@@mitchdomaas304 might need different temperatures. Thanks for pointing it out though.
It may burn on the grill, due to the temperature. But they often keep a pineapple on top of the spit, so it’s a very compatible flavor.
Good idea but I think because of how thin the meat is, the juice will basically disintegrate the meat if you leave it too long.
Rick, this is a wonderful recipe. I will definitely have to try. My wife and I must have been born Mexican in a previous life. I love all your recipes. They capture what I believe to be the essence of Mexican food. I especially love your approach to making the food and the ease with which you explain the steps. Subscribed!

@John It's not a Lebanese dish though, it's a spin on a Lebanese dish. I judge Lebanese places on their Shwarma, I judge Mexican places on their al Pastor. I promise that if you visit Lebanon you'll see shwarma, but not tacos al pastor.

Al pastors tacos are so amazing. I always get asada for some reason but al pastor is so much more tasty (for the most part )

Niiicce addition to the videos! I have made this with tenderloin before and chili de arbol and guajillo chili adobo. I cant wait to try the shoulder roast and the chipotle from can is an awsome timesaver as well as flavor profile! Keep em coming chef! I so want to visit your restaurants someday! Ps, your margarita recipes have made me vary popular at dinners/pool parties. Lol
The meat can be marinated for 24 hours and will be super delicious. Greetings from MX.
