I love this side dish. It looks like it can pair up well with pretty much any kind of main dish. I'm really enjoying the Secret Weapons series too. :-)

Foods like these are the main dish usually. The side dishes would be beans, rice, and/or tortillas. Maybe eggs if you want them for breakfast. This is merely an anecdote, however.
Thank you Rick; I've been eating alot of Potatos recently because of a Bulk amount Combined with Summer hot weather; isnt a Good combination. So know to consider another different flavor, for Potatos!

i thought for sure you were going to have to mix it there at the end...so unbelievably dissapointing....no one will have the same ratio of garlic mayo and hot sauce....wildly different responses to the same dish
Heterogeneity. People can mix it up as they desire. Why not keep the aioli, hot sauce and cilantro on the side? Because why put out 4 things on the table when you can get the same effect with 1.

Nice to see you show that mash technique for the garlic. I rarely seen anyone mention that, but It's really good for small amounts of garlic.
