    i wonder why there was no brown meat in the cavity? When I buy dressed brown crab theres normally enough to fill 2/3 of the shell

      To leave an answer to the question for those that wonder: If it's outside season, then you'll mostly find these in the sea. Where I live we call them "watery crabs" and just toss out again for someone else to perhaps fish it when it's full of meat. They barely don't have any brown meat at all, but just a water, and you can feel it when holding them that they are empty and of light weight. The ones to keep feel much more heavy and dense in the hand, and I'm not sure if I'm correct in this, but females usually have more meat. The crabs can also be put in large boxes of wood in the sea, kept right below surface (not sure what the English word is for these boxes), and fed with fish. But during season, in late summer, early autumn, they are usually easy to find, eating barnacles in the nights, along the shores, and full of delicious meat, both brown and white meat, as well as roe in the females.

    I get crab every week off Grimsby Fish Dock and have to say that one Rick had didn't look of very good quality to me.

      Brown Crab, we do sell them here in Malaysia.

      It's a brown crab. You can tell brown crabs easily due to them being brown and crab-like.

    I live in brum and have purchased live crabs from the bullring market all my life man and boy I kill them cook them and dress them I taught myself before we had youtube and have to say this is worst display of how to dress a crab I have ever seen

      Crab sandwich with a side salad is £26 about 32 bucks in his restaurant, the more time he's on TV the higher the food prices

    Rick you made a big mistake? You put the crab in the pan the wrong way up. The way you put it in means the juice of the crab is going to escape into the water and you lose a lot of the goodness and flavour. Claw side up in very little water and a slow cook simmer with the pan lid on. PS you don't need salt either as the crab contains salt naturally. Try it and you'll taste a big diffrance.

    Rick for a top chef you really dont know how to cook shellfish mate, its boiling water crab in, back to boil then just 2 mins, no matter what size... perfect.
