I boil mine but I'm definitely going to try this now. One of my favorite things to do down in North Carolina is doing a pot of crabs and drinking some beers after fishing all day.
Steaming crabs is a Maryland thing. I grew up with my mom steaming crabs, so that's what I stuck with. I'd like to do a taste test between steamed and boiled to see if there is a difference. Crabs and beer pair very well together. Kind of like cheese and wine 😁
Blue crabs are my favorite of the crabs I've taste all over the world. I've tried different ingredients, but this way seems to make the crabs taste sweeter. I think it's the cider vinegar.
Hi Tomy, Have you tried everglades seasoning, It's pretty good especially added to your favorite spices. Man they look perfect! Steaming crabs is the best way I agree!
I'll have to give that seasoning a try. I'll be getting some more crabs soon. I'm already craving them. I'm planning to make a future video steaming and boiling some. Then I'll have to kids taste test. They are brutally honest, so we'll know which one they like better.
Grew up on Md's Eastern shore so MOST DEFINATELY a steaming guy. Thanks for your informational video's. Takes a lot of time shooting and editing, hope you get a lil something out of it. I agree with your method for the most parts. I don't much care if they break claws off during cooking, they all get eaten anyway, so I don't ice em down. The main difference in our method is the flame under the pot. I turn gas on high as soon as water and vinegar are in pot to get the steam going right away. I use a rack rather than a holy pot inside my pot. (One less pot to clean up when done.) Like you I layer spice on crabs and about the same time the pot is full it's steaming pretty good. At this point I TURN THE HEAT DOWN. Otherwise the crabs in the bottom of the pot end up getting BOILED rather than steamed. Only need a small steady stream of steam to do the job. Once the steam is small and steady I give em 20 MINUTES and they're done. Less heat = no BOILED crabs. You can tell if they got boiled if there's no spice on the crabs in bottom of pot. Again, thanks for your videos, lots of good info.
Thank you for the kind words and for sharing your method. I do actually notice that the bottom crabs are boiled. I will lower the heat the next time I cook a bushel. I will eventually make this video again with a bushel I caught myself, but that will be a while from now. I'll make sure to mention you in the video. I'm from Maryland and I find it interesting that I have only found a few channels that show steaming crabs with water, vinegar and beer. I was wondering why you omitted the last ingredient. No criticism here just curious. I love the way you layered the crabs right side up and hit it with seasoning each time. So on point. As a side note, I do love Jo's but I will never give up my Old Bay. ;)

Of course I'm a little partial to steamed, since I'm from Maryland. The crab population is up this year, so I hope catch enough to show different ways to cook them. That is a great question. When crabbing was really good, I used to catch 1 to 2 bushels every other weekend in early summer and fall. This allowed me to try different recipes. This seemed to be best recipe my family and friends liked. I still have a nice cold beer 🍺while eating them 😁 I like layering and seasoning them like that to make sure all of the crabs have seasoning on them. Icing them down makes it easier to do. I still love Old Bay, but I prefer using it to season food like fries or wings. I just prefer JO #2 for seasoning steamed crabs. I never use it to season food. A good friend introduced it to me years ago and I've liked it ever since. I'll share a couple more recipes when the crabs are running good. Thanks for watching.
Beer was brewed for drinking by humans. Crabs arent old enough to consume beer and would never appreciate a good IPA. I've always said its a waste of beer to dump in the pot. Have run side by side tests with beer, and without, when cooking multiple bushels and nobody could discern the difference once there cooked and eaten.
Steaming is the only way to go if u want to appreciate the natural sweet rich taste of a MD blue crab. Crabs from almost anywhere else boil drenched with as much seasoning as you have to kill that nasty bitter imported flavor. Florida blue crabs are the worst. Something to do with the forage they eat, beautiful big ass crabs but they taste like rotten fish. For those that commented on the lack of Old Bay. Old Bay is for shrimp or seasoning crab cakes. JO #2 is the bomb for seasoning steamed crabs. Might use straight old bay in the pot liquor but never on the crabs.
It was a lot of crabs. My brother took the rest to Michigan. They are really expensive over there. I prefer steaming as well, but I'm planning try boiling them do see if there is a difference.
i have a boiler basket that touches the bottom but i don’t want the crabs to boil, i want them to be steamed. do you know where i can a rack? how do you care for your pot so it doesn't rust
You could install stainless screws with washers and bolts to bottom of the basket. You could also use the basket I used in another video to raise it. Here's a link to the basket amzn.to/3jGVUvI. I just wash my pot and basket after every use. It actually developed a small pin hole, so I might replace it soon. I've had it for over 12 years, so I got good use it of it.
I boil them for about 6-7 minutes...then put the seasoning (Old Bay) on top. As you eat them the seasoning gets all over your fingers and into your mouth with the crab ! Oh so good !!!
Every crab house you go to in Maryland uses their own blend of seasoning. Even when you buy crabs, they don't sell their own blend of seasoning. JO Spice Company is located in Maryland as well. I still use Old Bay, but only for seasoning food like fries, wings, etc. When it comes to cooking crabs, I like using JO Spice. I'll have to cook both some time and do a taste test with my guests.

Hi. Me and my husband have been having trouble with our customers occasionally complaining about the crabs being too mooshy ...... we have a very similar pot that we use to cook them. However we boil them in that pot. Should we be steaming them instead?..... or does it not matter ?..... or is there a perfect time you recommend to boil them in a pot of that size ?.... and we usually cook them by a half dozen to dozen pee customer.

If the crabs are alive going in the pot, they wont taste mushy. This usually occurs when crabs are left on ice overnight, or a refrigerator that has its temp too low for crabs to survive. Crabs should be kept overnight at a frig temp of 47 to 50 degrees. Like I said, mushy crabs occur being iced down overnight or longer and showing lifeless movement.
Tell me how do you know if all the crabs were alive when you were putting them in the cooler ? My understanding is they all should be alive before cooking them?
They were all alive. I use ice to slow them down, so they are easier to deal with. It also helps prevent them from releasing their claws while they are being cooked.
I'm trying to slow them down, so they are easier to handle. If I didn't, they would be challenging to put them in the pot. There's a different process if I'm planning to store them over night.

@@LopsidedCircle sure. I'll make a video showing how to store them in a cooler over night. They can actually live for a while in a bushel basket with a damp towel on top of them. You could probably get away with keeping the basket in an air conditioned air for the trip. If you transport that far in a cooler, it would be best to have something separating them from the bottom, so they are not sitting in the melted water. I would also crack the lid, so they have some air.

It does not matter where you're from or what style of cooking you need to clean and wash those crabs before eating. Worried about the meat going bad while cleaning that many crabs? Keep them in ice water and salt. Steaming or boiling.
I appreciate your feedback. I wish I had better lights back then, but I didn't, so I just went with it. It's a challenge to cook outside in the winter when it gets dark early. I'm planning to do another one when I catch my first bushel of crabs this year. I should have a problem lighting next time.
I agree. Commercial crabbers are still allowed to keep them. They tend to be cheaper. Especially during the off season in the winter time. I only buy them during the off season because of costs. As a recreational crabber I can't keep females.

I have the same pot I use my bushel basket topper on top of mine and I can get about an extra half bushel in that pot

This comment is spot on. Beer was missing. So was mixing some salt with the old bay. Great method otherwise.

Putting the crabs on ice makes them lethargic prior to steaming them

This is my favorite method. I'm planning to trying some other methods this year to see which one is really the best.

Female crabs should ALWAYS be thrown to lay eggs!

Not a fan of female crabs. I like mine steamed.
I prefer large males crabs myself, but they are really expensive during the off season. We settled for females to get a crab fix.
