People frequently ask if we achieve a caffeine-free coffee by not using coffee beans with caffeine or through a special roasting process. So, I've prepared an explanation. Does coffee bitterness correlate with higher caffeine levels? The straightforward answer is no. Whether coffee is roasted to be bitter or not, there is not a significant difference in caffeine content.
Now, how is caffeine content determined? Caffeine is related to the environment in which coffee grows. The term 'caffeine' literally comes from 'café,' meaning coffee, and 'ine,' a substance. It refers to the self-defense substance that coffee trees emit - a kind of toxin. When insects attempt to eat the leaves of coffee trees, these trees release caffeine to prevent them from being consumed. Therefore, coffee trees grown in areas with more insects tend to have higher caffeine content.
This often applies to coffee grown in flat regions, notably in countries like Vietnam, Indonesia, and India. On the other hand, coffee trees from higher-altitude regions with fewer insects can afford to release less caffeine. Therefore, coffee with higher cultivation altitude tends to have lower caffeine content.
Our Alexandino coffees exclusively use specialty coffee grown at altitudes of 2000 meters or above, ensuring that it is single-origin. In truth, it is accurate to say that our coffee has almost no caffeine. Those who have tried our coffee often say it has an exquisite taste and allows them to sleep well at night.
